Breakfast Enchiladas

Baked Enchiladas Stuffed with Veggies and Eggs

PREP — 10 Minutes    COOK — 35 Minutes   

TOTAL — 45 Minutes  SERVINGS — 12

ingredients

• 8 ounces salsa verde

• 8 ounces Schultz’s Green Chili Lime Cooking Sauce

• 1/4 cup cilantro

• 1/2 yellow bell pepper

• 1/2 red onion 

• 3 1/2 tablespoons olive oil (divided)

1/2 teaspoon ground cumin 

• 1/2 teaspoon ground coriander

1 cup canned black beans (drained and rinsed)

• 3/4 teaspoon salt (divided)

• Black Pepper

• 6 large eggs

• 6 ounces Mexican blend cheese (shredded, divided)

• 12 corn tortillas (6-inch)

• Diced Avocado

• Sour Cream

directions

1.  Preheat oven to 350°.

2.  Spoon about 1/2 cup of salsa verde into the bottom of a 9×13-inch casserole dish. Set aside.

3.  Finely mince the cilantro and set aside. Finely dice the peppers and onion.

4.  Set a large skillet over medium high heat and pour in olive oil. Once the oil is shimmering, add the peppers and onion.

5.  Cook the vegetables for 6-8 minutes, stirring frequently, until the vegetables are softened and slightly browned. Add the black beans, cumin, coriander, and salt and pepper, to taste. Cook, continuing to stir, for 1-2 minutes longer.

6.  Remove the skillet from the heat. Transfer the black bean and vegetable mixture to a large mixing bowl.

7.  Crack the eggs into a separate mixing bowl and beat until smooth.

8.  Return the skillet to the stovetop and reduce the heat to medium low. Add the olive oil.

9.  Once the oil is shimmering, pour the eggs into the skillet. Cook for 2-3 minutes, folding the eggs with a rubber spatula, until they are softly scrambled. Take care not to overcook the eggs. Season with about 1/2 teaspoon of salt, and black pepper, to taste.

10.  Transfer the eggs to the bowl with the black bean mixture, and add 1/3 of the shredded cheese. Mix with a rubber spatula to combine.

11.  Place one tortilla on a dinner plate. Spoon about 1/4 cup of the black bean and egg mixture into the center of the tortilla. Using clean hands, tightly roll the enchilada and place seam-side down into the sauced casserole dish. Repeat with the remaining tortillas.

12.  Once all the tortillas are rolled and arranged in the casserole dish, pour Schultz’s Green Chili Lime Cooking Sauce and the remaining salsa verde evenly over the enchiladas. Sprinkle the remaining cup of shredded cheese over the top.

13.  Bake the enchiladas for 22-25 minutes on the middle rack of oven, until the edges are bubbling and the cheese is melted and slightly golden brown.

14.  Check to see that enchiladas are done. Remove from oven or add time as needed.

15.  Sprinkle with the minced cilantro. Serve with diced avocado and sour cream, if desired.

Skillet Nacho Dip

There’s ordinary chips & dip, and then there’s this. 

PREP — 10 Minutes    COOK — 10-15 Minutes   

TOTAL — 20-25 Minutes   SERVINGS — 4

ingredients

• 1 teaspoon olive oil

• 3/4 cup chopped red onion, divided

• 2 tablespoons seeded minced jalapeno

• 1 1/2 tablespoons all-purpose flour

• 2 teaspoons ground cumin

• 2 teaspoons chili powder

• 2 tablespoons Schultz’s Seasoning & Rub

• 2-3 tablespoons Schultz’s Green Chili Lime Cooking Sauce

• 2/3 cup unsalted beef stock

• 2 cooked ground beef patties, finely crumbled

• 1 cup drained unsalted canned pinto beans

• 2 ounces pre-shredded part-skim mozzarella cheese (about 1/2 cup)

• 2 ounces pre-shredded 2% reduced-fat Mexican-blend cheese (about 1/2 cup)

• 1/2 cup chopped tomato

• 1/2 cup chopped avocado

• tortilla chips

directions

1. Preheat broiler with oven rack in upper middle position

2. Heat oil in a large cast-iron skillet over medium-high. Add 1/2 cup onion and jalapeño to pan; sauté 4 minutes or until tender. Add flour, cumin, chili powder and Schultz’s Seasoning & Rub; cook 1 minute, stirring constantly. Add stock; bring to a boil. Reduce heat to medium, and stir in crumbled beef patties, beans, and Schultz’s Green Chili Lime; cook 2 minutes. Stir in mozzarella; cook 1 minute or until cheese is melted. Remove pan from heat.

3. Sprinkle Mexican-blend cheese over pan; broil 1 minute or until cheese is melted. Sprinkle remaining 1/4 cup red onion, tomato, and avocado over pan. Serve with tortilla chips.

Sticky Brussels Sprouts

ingredients

• 1 lb. Brussels Sprouts

• 2 cloves Garlic

• Olive Oil

• 1.75 oz. of Sweetwood Smokehouse Peppered Turkey Jerky

• 1/2 cup Schultz’s Gourmet Green Chili Lime Cooking Hot Sauce

directions

1.  Preheat oven to 375°F. Trim and halve brussels sprouts. Mince peppered turkey jerky either by knife or with a chop setting on a blender or food processor and place aside. Mince garlic and place in a bowl with the brussels sprouts along with 2 tbsp of olive oil.

2.  Bake on a nonstick pan for 15-20 minutes or until brussels sprouts start to brown. Remove pan and sprinkle the turkey jerky and green chili lime sauce onto the brussels sprouts. Cook for an additional 2-3 minutes.

3.  Garnish with additional cheddar cheese, green chili lime sauce and salt and pepper to taste. Enjoy!

Seasoned Steak Taco Salad

Finally! A salad that’s actually a meal.

PREP — 5 Minutes    COOK — 25 Minutes   

TOTAL — 35 Minutes  SERVINGS — Ten

ingredients

• 1 head Romaine Lettuce

• 1 large Tomato

• 2 Jalapeños

• 1 yellow Bell Pepper

• 1 Avocado

• 1/3 cup shredded Mexican Cheese Blend

• 1 cup Black Beans

• 1 cup White Rice

• 5.25oz of Sweetwood Smokehouse Peppered Steak Bites

directions

1.  Bring 2 cups of water, with a pinch of salt, to a boil in a small saucepan with a lid. Add 1 cup of rice, stir briefly to break up clumps and cover the pot with the lid. Reduce the heat and let simmer for 20 minutes.

2.  While rice is cooking, separate the romaine leaves and rinse. Shake off excess until dry. Gather the leaves into a loose bundle and cut across to make rectangular bite-sized pieces, 1-2″ wide. Drain black beans in colander and set aside. Dice the bell pepper, jalapeño peppers. Be sure to leave some seeds in if you like it spicy! Chop tomato and peppered steak bites. Cut avocado into slices.

3.  After the rice has cooked for 20 minutes, turn the burner off and remove the pan from heat. Let the rice sit for an additional 5 minutes with the lid on. Then spread the rice out on a pan to cool quickly for the salad.

4.  Assemble your salad by layering all the ingredients on top of the romaine lettuce. Dress the salad with Schultz’s Green Chili Lime Cooking Hot Sauce. Top with shredded cheese and season to taste with Schultz’s Seasoning and Rub. Enjoy!

• 3 corn tortillas

• 4 eggs

• 2 tbsp shredded cheddar cheese

• 1/2 tsp salt

• 1/2 sliced avocado

• Sliced tomatoes

• Sliced radishes (optional)

1. Heat a small nonstick pan over medium-low. Crack eggs into a bowl and whisk. Add in salt and shredded cheese. Pour into heated pan and scramble over low until eggs are fully cooked.

2.  Heat tortillas in a skillet.

3.  Top tortillas with scrambled eggs, sliced avocado, tomatoes, radishes and a generous drizzle of green chili lime sauce!

GREEN CHILI LIME FAJITAS

Fresh, zesty, and easy! These quick Green Chili Lime Fajitas are a great last minute homemade weeknight dinner.

PREP — 20 Minutes    COOK — 25 Minutes    

TOTAL —40 Minutes  SERVINGS — Three

ingredients

• 3 Bell Peppers (colors of your choice)

• 2 Chicken Breasts or 6-8 Chicken Thighs or Top Sirloin Steak

•1-2 onion (optional)

• 3 tbsp. of Schultz’s Gourmet Premium Seasoning & Rub

• ¼ Cup Flour

• 6 Tortillas (flour or corn)

• 8-10 oz. of Schultz’s Gourmet Green Chili Lime Sauce

• 4 tbsp. Sour Cream

directions

1.  Slice meat into small strips.

2.  Cover meat strips in Schultz’s Gourmet Premium Seasoning & Rub

3.  Slice peppers and onions into strips.

4.  Heat 1 tbsp. Olive Oil over medium heat in a non stick pan.

5. Add peppers and onions and stir for 3-4 minutes (until soft). Set aside.

6. Add meat to skillet (add oil if necessary. Cook for 3-4 minutes (until cooked through).

7. Add peppers and onions back to skillet and cook for about another minute.

8. Serve mixture on toasted tortillas with sour cream and Schultz’s Gourmet Green Chili Lime sauce.

•  12 Medium Tortillas

1. Place finished pulled pork into toasted flour tortilla and top with Cilantro Lime Coleslaw and any other toppings you want.

ingredients

• 1.0lb Ground Beef, Ground Turkey or Ground Chicken

•  3 tbsp. Schultz’s Gourmet Premium Seasoning & Rub

• OPTIONAL: Add Green Chili Lime or Chipotle Cooking Hot Sauce

directions

1. Place Ground beef in mixing bowl and add Schultz’s Gourmet Premium Seasoning & Rub.

2. Mix well with hands.

3. Place in hot skillet and use spoon to breakdown beef in to small pieces.

4.  Add more Schultz’s Gourmet Premium Seasoning & Rub to taste.

5. Once beef is fully cooked, place in paper towel lined bowl to absorb excess grease.

6. Serve with your favorite taco fixings!

BREAKFAST BURRITO

Start your morning off right…with a zesty burrito to wake up your tastebuds… it is the most important meal of the day right?

PREP — 45 Minutes    COOK — 5 Minutes    

TOTAL —1 Hour  SERVINGS — Six

ingredients

• 1 lb. Chorizo

•  6 tbsp. Schultz’s Green Chili Lime Cooking Hot Sauce or Chipotle Cooking Hot Sauce

• 6 large eggs

•½ cup Schultz’s Gourmet Camp Style Potatoes (Click to view recipe)

•3-4 Flour Tortillas

•1 cup shredded Cheddar Cheese

directions

1. Make sure Schultz’s Gourmet Camp Style Potatoes are cooked and ready to use.

2. Crack open eggs and place in bowl and whisk thoroughly.

3. In a hot skillet, place chorizo in pan and begin cooking.

4.  After 2-3 minutes, add 3 tbsp. Schultz’s Green Chili Lime and cook chorizo until temp is 165°F.

5. Remove chorizo from pan and place in bowl.

6. In the same skillet, place whisked eggs in pan and scramble eggs until they’re finished.

7. Steam or microwave tortillas until soft.

8. Place ¼ cup of egg, ¼ cup chorizo, ¼ cup potatoes ¼ cup cheddar cheese and 1tbsp. Sweet Heat Hot Sauce in tortilla and wrap (ingredients can also be mixed together before wrapping).

9. **For smothered burrito: Mix 1 cup sour cream and 2 tbsp. Schultz’s Green Chili Lime together in a separate bowl and smother burrito with Green Chili Lime Cream Cheese.

10. Enjoy!

GREEN CHILI LIME PULLED PORK

Whether you are eating it on tacos, with eggs, or by itself… this pork recipe will be your all-time favorite. It’s fresh and zesty and full of flavor, this pork will be falling apart- in a good way.  

PREP — 1.5 hours    COOK — 2 Hours    

TOTAL —3.5 Hours  SERVINGS — Six

ingredients

• Pork Shoulder (Pork Butt)

•  ¼ Cup Schultz’s Gourmet Premium Seasoning & Rub

•  14oz Schultz’s Green Chili Lime Cooking Hot Sauce

•  Cilantro Lime Coleslaw

directions

1. Preheat oven to 330 ºF

2. Apply Schultz’s Gourmet Premium Seasoning & Rub liberally to the pork shoulder.

3. Wrap tightly in heavy duty aluminum foil twice keeping the folds on top.

4.  Place in oven at 330 ºF for 3.5 – 4 hours (or slow cook in a smoker/grill)

5. Carefully remove and drain juices into a grease separator for later use.  

6. Allow meat to rest for 30 minutes.

7. Trim and discard fat.

8. Using two forks or hands, begin shredding the meat and put into a 2” deep baking dish that can go back into the oven.

9. • Take the separated juices from the meat and stir and add to meat and hot sauce.

10. Place back into oven at 250 °F stirring well while reheating for 20-30 minutes

11. Serve on hearty buns as a sandwich with Cilantro Lime Coleslaw.
