BBQ Grilled Chicken

BBQ Grilled Chicken

Tender marinated chicken with bbq sauce, honey and lime.

PREP — 5 Minutes    COOK — 25 Minutes   

TOTAL — 30 Minutes  SERVINGS — 4

ingredients

2 cups Schultz’s Original BBQ Sauce

• Juice of 1 lime

• 2 tbsp. honey

• 1 tbsp. Schultz’s Spicy Original Cooking Sauce

• Kosher salt

• Freshly ground black pepper

• 1 lb. boneless skinless chicken breasts (or drumsticks)

• Vegetable oil, for grill

directions

1.  In a large bowl, whisk together Schultz’s Original BBQ Sauce, lime juice, honey, and Schultz’s Spicy Original Sauce and season with salt and pepper. Set aside 1/2 cup for basting.

2.  Add chicken to bowl and toss until coated.

3.  Heat grill to high. Oil grates and grill chicken, basting with reserved marinade, until charred, 8 minutes per side for breasts, and 10 to 12 minutes per side for drumsticks!

Peach Cucumber Salsa

A Sweet Summertime Salsa.

ingredients

2 cup cucumber diced finely in small squares

2 cup peaches diced finely in small squares

• 1 cup onion diced finely in small squares

• 2 tablespoons jalapeño seeds removed, diced finely

• 3 tablespoons fresh cilantro chopped

• 2 tablespoons of Schultz’s Green Chili Lime

• 1 tablespoon fresh lime juice

• 1/2 tablespoon olive oil

• 1/2 teaspoon pepper

• 1 teaspoon sea salt

• tortilla chips for dipping

1.  Finely chop cucumber, onion, peaches and jalapeño.

2.  In a large bowl, add Schultz’s Green Chili Lime with the other ingredients. Mix together until thoroughly combined.

3.  Enjoy with chips, or serve over some grilled chicken or fish!

Scallion Waffles

Deliciously savory, optionally sweet.

ingredients

• 2 Eggs

• 2 Bunches of Scallions

• 1 tsp Sesame Oil

• 1/2 tsp Sugar

• 1 tbsp Baking Powder

• 2 c Flour

• 1-3 tsp Schultz’s Chipotle Cooking Sauce

• 1 tsp Schultz’s Seasoning and Rub

• Vegetable Oil

• Kosher Salt

• Soy Sauce or Maple Syrup

• Waffle Iron or Waffle Maker

Other ingredient and topping ideas: toasted sesame seeds, bacon, cheese.

1.  Finely chop the scallions. Beat the eggs and oil together until well combined. Next whisk in the milk, sesame oil, sugar, seasonings, flour, and baking powder until just combined. Add chopped scallions and mix until evenly incorporated. Let batter sit for a few minutes as your waffle iron gets hot.

2.  Once waffle iron is heated to high heat, pour batter to make waffles, making sure to flip halfway through if possible. Adjust as needed for your iron and batter!

3.  Top with Chipotle sauce, extra scallions, and toasted sesame seeds if desired. Enjoy warm and serve with either soy sauce, or maple syrup if you need a contrasting sweet flavor!

One Skillet Hash

Everything You Want for Breakfast in One Pan.

ingredients

• 4 Gold Potatoes

• 3 tbsp Schultz’s Sweet Heat Cooking Sauce or Green Chili Lime Cooking Sauce

• 2 tsp Schultz’s Seasoning and Rub

• 1/2 small Yellow Onion, diced

• 1-2 strips of Bacon

• 1/4 cup Cilantro

• Olive Oil

Kosher Salt

• Fresh Ground Black Pepper

• 4 Eggs

• Cast iron, or other oven-safe skillet

Other ingredient and topping ideas: beans, radish, 

directions

1.  Preheat oven to 400°F. Place strips of bacon in a large, oven-safe skillet. Cook over medium low heat on both sides until cooked through, but not yet crispy. Remove from heat and set aside. When bacon is cool, roughly dice.

2.  Leaving some grease in the pan, set heat to medium high, add potatoes, bell pepper and onion to cook for 7-8 minutes or until soft enough to pierce with a  fork easily.

3.  Add garlic, Schultz’s seasoning, black pepper, salt and 1 tsp of the cooking sauce. Cook for 1-2 minutes more.

4.  Next, using a spoon, create holes for the 4 eggs to go. Distribute cheese into each hole and then crack the eggs into each spot.

5.  Place in preheated oven and cook for 8-10 minutes, until egg white is set bu the yolk is still runny.

6.  Remove the skillet from the heat. Garnish with bacon, fresh ground black pepper, cilantro, chives and the remaining cooking sauce. Enjoy!

Avocado Egg Sandwich

Avocado Egg Toast

Quick, Easy, Healthy, Delicious—YUM!

ingredients

• 2 Eggs

• 2 Ripe Avocados

• 2 tsp Schultz’s Green Chili Lime Cooking Sauce

• Lettuce or Spinach

• 2 tsp White Vinegar

• Olive Oil

Kosher Salt

Fresh Ground Black Pepper

directions

1.  Start a pot of water on medium high heat. Crack cold eggs into a small bowl. Add 1 tsp salt and 2 tsp white vinegar to the water.

2.  Once simmering, use a slotted spoon to create a circular whirlpool in the pot. Carefully add the egg, turn off heat, cover the pot and set a timer for 5 minutes.

3.  While the egg cooks, place bread in the toaster. Slice Avocado and season with salt and fresh ground black pepper. Wash and chop lettuce or spinach. Then, carefully lift your poached egg from the water with a slotted spoon.

4.  Assemble your toast or sandwich and add a drizzle of Green Chili Lime Sauce over your creation, Enjoy!

Classic English Breakfast

Also known as the ‘fry-up’

ingredients

• 1 Tomato

• 2 tbsp Butter

• 2 Large Eggs

• 2-3 Mushrooms, roughly chopped

• 1 tsp Schultz’s Spicy Original Cooking Sauce

Schultz’s Seasoning and Rub

• Bread, toasted

• 2 pork sausages (optional)

directions

1.  Preheat oven to 425°.

2.  If cooking the sausages, brown over a pan warmed to medium heat for 4-5 minutes. Next, put them in a baking dish and bake for 10 minutes.

3.  With a knife, slice an X into the bottom of the tomato and place it in the baking pan with the sausages, bake for 10 more minutes, turn off the oven, and leave the pan inside the oven so it remains warm.

4.  Using the same pan from earlier, melt a tbsp of butter, then fry mushrooms over high heat until mushrooms have softened. Season with a few pinches of Schultz’s Seasoning and Rub. Once cooked, transfer them to the oven so they stay warm.

5.  Add the beans to a small saucepan and cook over medium heat, stirring constantly. Add 1 tsp of Spicy Original Cooking Sauce.

6.  Lastly, fry the eggs, taking care that the yolk does not break. Toast bread and spread remaining butter over toast.

7.  Arrange the ingredients on your plate, and enjoy warm! Season with salt and pepper to taste, with a dash of Spicy Original over the eggs.

Buffalo Chicken Pull-Apart Bread

If there was ever a loaf of bread worthy of being an entree, this is it!

PREP — 10 Minutes    COOK — 40-50 Minutes   

TOTAL — 60 Minutes  SERVINGS — 4-6

ingredients

• 2 cups of cooked and shredded chicken

• 1 cup Schultz’s Spicy Original Cooking Sauce

• 2 1/2 cups of pepper jack cheese, shredded, divided

• 1/4 cup of chopped scallions

2 packages of pizza dough

• 1/2 cup of melted unsalted butter

• Ranch dressing for dipping (optional)

Green onions for garnish (optional)

directions

1.  Preheat oven to 350 degrees F.

2.  Roll out dough and cut into 3×3-inch squares. You should have 15 total squares; arrange in 3 rows of 5.

3.  In a bowl, toss together shredded chicken, Schultz’s Spicy Original Sauce, scallions, and half of the pepper jack cheese (1 1/4 cups).

4.  Brush butter on a dough square and begin to layer ingredients on top. Begin with Buffalo chicken mixture, followed by a sprinkling of cheese. Repeat with remaining squares, stacking one on top of the other, chicken side up.

5.  Brush the inside of a loaf pan with melted butter. Load stacked bread squares into loaf pan, and brush with remaining butter. Bake for 40 to 50 minutes until desired browning is achieved.

6.  Garnish with green onions and allow to cool. Serve from baking dish or other serving platter if desired.

Brisket Burnt Ends

Crisp on the outside, tender on the inside and bursting with flavor!

PREP — 10 Minutes    COOK — 1 Hour 40 Minutes   

TOTAL — 1 Hour 50 Minutes    SERVINGS — 6-8

ingredients

• Brisket Point (from a low and slow smoked prime brisket, pre-cooked)

Hot Dayum Rub, or substitute Schultz’s Seasoning & Rub

• 2 cups Schultz’s Sweet Hickory Barbecue Sauce

• Honey

• Brown Sugar

• Butter

directions

1. Cube the cooked point of a brisket and place the cubes in a cooking tin or pan (grill-safe). Smother with Hot Dayum or Schultz’s Gourmet Rub. Add 2 cups of Schultz’s Sweet Hickory Barbecue Sauce and mix. Top with drizzled honey, brown sugar and place a few small cubes of butter on top.

2. Cover the tin with foil and cook on the grill at 275°F for about an hour, or until the cubes are tender and sticky. Once tender and when the sauce begins to thicken, turn the grill temperature up to 350°F. Leave for around 30-40 more minutes and let the meat crisp up and the sauce thicken more.

3.  Remove the tin pan from the grill and serve immediately. Enjoy!

Buffalo Chicken Penne

This Pasta Packs a Punch.

ingredients

• 2 cups shredded chicken breasts

• 8oz cream cheese, cubed

• 1/3 cup Schultz’s Spicy Original Cooking Sauce

• 1/2 cup chicken broth

• 1 tsp paprika

• 1 tsp garlic powder

• 1/2 tsp black pepper

• 1/2 tsp kosher salt

• 3/4 cup blue cheese dressing

• 12 oz uncooked penne pasta

• green onions, chopped (optional)

• crushed red pepper flakes

directions

1. Heat a large skillet over medium heat

2. Add the cream cheese, Schultz’s Spicy Original Cooking Sauce, and chicken broth

3. Whisk until the mixture becomes creamy

4. Add the paprika, garlic powder, black pepper, salt and then stir to combine

5. Add the blue cheese dressing and stir to combine

6. Add the shredded chicken breast

7. Allow the sauce to simmer for 10 minutes over low heat

8. While the sauce is simmering, bring a large pot of water to boil on the stove. Add the penne pasta and cook according to package directions

9. Drain the pasta then add it to the cheesy buffalo chicken sauce and stir to combine

10. Top with diced green onions and crushed red pepper flakes

Nashville Hot Chicken Sandwich

Nashville Hot Chicken Sandwiches

Oven baked fried chicken sandwiches with a serious kick. 

PREP — 20 Minutes    COOK — 20-25 Minutes   

TOTAL — 45 Minutes (+6 hours to marinate)  SERVINGS — 6

ingredients

Marinade:

• 2 cups buttermilk

• 1/4 cup pickle brine

• 2 teaspoons Schultz’s Seasoning & Rub

• 1/3 cup Schultz’s Spicy Original or Sweet Heat Cooking Sauce

Oven Fried Chicken:

• 3 large chicken breasts, cut in half lengthwise

• 4 cups cornflakes

• 1/4 cup all purpose flour

• 2 teaspoons salt

• 1 teaspoon cayenne

• olive oil for brushing

Hot Chicken Cayenne Glaze:

• 3 tablespoons cayenne

• 2 tablespoons brown sugar

• 1 tablespoon paprika

• 1 teaspoon chili powder

• 1 tablespoon Schultz’s Seasoning & Rub

• Your favorite pickles and white bread, optional but highly recommended

• 3/4 cup vegetable oil

• 4 tablespoons butter

Sandwich Ingredients:

• 6 traditional hamburger buns

• sliced pickles

• coleslaw

• ranch dressing (optional)

directions

Marinade:

1. For this recipe start with the marinade. Whisk together buttermilk, pickle brine, Schultz’s Spicy Original or Sweet Heat sauce and two teaspoons of Schultz’s Seasoning & Rub, and then pour it into a large zip top bag. Cut your chicken breasts in half lengthwise and add them to the buttermilk marinade.  Push out the excess air, seal the bag and move your chicken to the refrigerator to marinate for at least six hours but overnight is best. 

Oven Fried Chicken:

2. Once your chicken is marinated, remove your chicken breasts from the buttermilk and move to a baking rack to drain.  Add cornflakes to a food processor and pulse to create cornflake crumbs.  Move your cornflake crumbs to a large bowl and stir in the all purpose flour along with cayenne and salt. Preheat your oven to 450 degrees and line a baking pan with parchement paper or tin foil. Dredge the chicken pieces in the cornflake crumbs, pressing firmly to adhere the crumbs to all sides of the chicken.  Move the coated chicken to the baking pan and repeat until all chicken pieces are coated in cornflakes.  Lightly brush each of the chicken pieces with olive oil and bake for 20-25 minutes, turning your chicken over half way through the cooking time and continue cooking.

Hot Chicken Cayenne Glaze:

3.  As your oven fried chicken is baking, make your hot chicken cayenne glaze.  In a small saucepan, add vegetable oil and butter and heat over medium heat. Increase your temperature slightly until you just start to see little bubbles start to form.  Whisk together your seasoning and spices in a separate bowl and then slowly start whisking into your heated oil. Make sure to whisk you’re ingredients together well before adding to the oil.  Once your oven fried chicken is done, remove from the oven and using a basting brush, coat both sides of your chicken in the cayenne glaze. 

Nashville Hot Chicken Sandwich:

4.  Get your hamburger buns ready, removing the top half from the bottom. Take the bottom half of the bun and add a small amount of ranch dressing as the base of your sandwich. Next, place your seasoned chicken breast on top of the ranch. Add 2-3 slices of pickle. Finally, add a scoop of coleslaw on top of that and place the remaining half of your hamburger bun back on top. Serve and enjoy!
