Spicy Chipotle Caramelized Onion Dip

Spicy Chipotle Caramelized Onion Dip

Spicy, Sweet and everything in between!

PREP — 10 Minutes    COOK — 40 Minutes   

TOTAL — 50 Minutes  SERVINGS —Six

ingredients

• 3 medium-sized yellow onions

• 2 tbsp Salted Butter

• 1 tsp Salt

• 3 tbsp Schultz’s Gourmet Chipotle Cooking Hot Sauce

• 1/4 cup white wine (alternatively use water or broth)

• 10 oz. Cream Cheese

• 10 oz. Sour Cream

 

directions

1.  Soften Cream Cheese at room temperature for 1 hour. Slice onions very thinly (easiest to use a mandoline).

2.  Heat a large non-stick skillet to medium, add butter, onions and salt. Sauté about 15 minutes, stirring often, until translucent and softened.

3.  Add Chipotle sauce, stir well, and continue to sauté about 10 minutes. Add a splash of white wine (or your alternate—something to keep the onions hydrated) and continue cooking. Continue to add liquid as needed until onions are deep golden brown and caramelized, about 35-40 minutes total.

4.  In a large mixing bowl, cream together cream cheese with a hand mixer until no clumps remain. Transfer onions to a cutting board and slice before adding to dip. Stir onions into dip until well mixed.

5.  This dip is best served and eaten with our Schultz’s Homemade BBQ Chips. Enjoy!

Tangy Mustard Chicken and Apples

Fall flavors for the whole family

PREP — 10 Minutes    COOK — 30 Minutes   

TOTAL — 40 Minutes  SERVINGS — Four

ingredients

• 8 Chicken Thighs

• 2-3 tbsp Schultz’s Gourmet Tangy Mustard BBQ Sauce

• 1 large Onion, cut into large chunks

• 2 cooking Apples (such as Cortland), cut into chunks

• 1 cup Chicken Broth

• Kosher Salt

• Ground Pepper

• 2 tbsp Olive Oil

• 1 1/2 tsp softened Butter

• 1 Tbs All-Purpose Flour

 

directions

1.  Preheat the oven to 450°

2.  Season the chicken with salt and pepper. Heat the olive oil in a large oven-proof skillet over medium-high heat. Working in bathes if necessary, add the chicken skin side down and cook until golden, about 6 minutes. Flip and cook 2-3 more minutes before transferring to a plate. Pour off all but 2 tablespoons of the drippings.

3.  Add the onion and apples to the skillet and season with salt and pepper. Cook until slightly softened, about 4 minutes. Mix the broth with the Tangy Mustard as best you can and add to the skillet and bring to a boil. Arrange the chicken, skin-side up, in the skillet. Transfer to the oven and roast until the chicken is cooked through, 15-20 minutes.

4.  Mix the butter and flour to form a paste. Bring the pan juices to a simmer, whisk in about half of the butter-flour mixture and boil to thicken, 2 minutes. Continue to cook, adding more of the butter-flour mixture as needed to make a slightly thick gravy.

5.  Use a slotted spoon to transfer the chicken, apples and onion to plates. Pour the gravy over the roasted chicken. Enjoy!

Homemade BBQ Chips

Fried in a Flash and Eaten Even Quicker

PREP — 25 Minutes    COOK — 40 Minutes   

TOTAL — 1 Hour  SERVINGS —Six

ingredients

• 2 large Russet Potatoes

• Vegetable Oil

• Kosher Salt

Schultz’s Gourmet Seasoning and Rub

 

directions

1.  Wash potatoes well and slice very thinly—it’s best to use a mandoline for this. Soak potato slices in ice cold water for 15 minutes. Drain and pat dry between paper towels.

2.  While potatoes are soaking, heat 2-3 inches of vegetable oil in a deep dutch oven to medium high. Be sure not to over crowd the pan when you start frying your first batch—depending on the size of your pot, you can fry 15-20 minutes at a time. Flip each chip halfway through and fry until golden brown on both sides.

3.  Remove chips carefully and transfer to a paper towel lined wire rack. Sprinkle or toss with a pinch of salt and Schultz’s Seasoning and Rub. Enjoy!

Hot Pumpkin Soup

Who knew soup could give you the warm & fuzzies!

PREP — 50 Minutes    COOK — 8 Hours   

TOTAL — 9 Hours  SERVINGS —Nine

ingredients

• 8 cups chopped, fresh Pumpkin (about 3 lbs.)

• 4 cups Chicken Broth

• 3 peeled and chopped Tart Apples

• 1 chopped Onion

• 3 tbs Schultz’s Gourmet Chipotle Cooking Hot Sauce

• 2 tbs Lemon Juice

• 2 tsp minced, fresh Ginger

• 2 cloves minced Garlic

• 1/2 tsp Salt

• 1/2 cup Roasted Pumpkin Seeds

 

directions

1.  In a 5 quart slow cooker, combine the Pumpkin, Chicken Broth, Apples, Onion, Chipotle Hot Sauce, Lemon Juice, Ginger, Garlic and Salt. Cover and cook on low for 8-10 hours or until Pumpkin and Apples are tender.

2.  Meanwhile, make the Roasted Pumpkin Seeds.

3.  Cool soup slightly, process in bathes in a blender until smooth. Transfer to a large saucepan until evenly heated.

4.  Garnish with Roasted Pumpkin Seeds and enjoy!

Roasted Pumpkin Seeds

Our Must-Have for October!

PREP — 20 Minutes    COOK — 40 Minutes   

TOTAL — 1 Hour  SERVINGS —Six

ingredients

• 1 1/2 cups Raw, Whole Pumpkin Seeds

• 2 tsp melted butter or olive oil

• 1 tsp Schultz’s Gourmet Premium Seasoning and Rub

• 1 tsp Salt

directions

1.  Scoop Pumpkin Seeds out of the Pumpkin and place them into a colander.

2.  Rinse with water while sorting through the seeds with your hands to remove the pumpkin guts.

3.  Dry overnight in a baking pan lined with parchment paper or paper towels, remove any left-over pumpkin guts the next day.

4.  After the seeds are dry, preheat oven to 300°F

5.  Toss seeds in a bowl with all ingredients.

6.  Spread the seeds in a single layer on a baking sheet and bake for 40 minutes or until golden brown, stirring occasionally.

7.  Salt and add additional Schultz’s Seasonings to taste and enjoy. Feel free to repeat for as many pumpkins as you carve!

ingredients

• 1 1/2 cups softened Butter

• 1 lb. shredded Sharp Cheddar Cheese

• 2 tsp Schultz’s Gourmet Premium Seasoning and Rub

• 1 1/2 tsp Salt

• 4 cups All-Purpose Flour

directions

1.  Beat the first four ingredients at medium speed until blended. Gradually add flour, beating just until combined.

2.  Use a cookie press with a star-shaped disk to shape mixture into long ribbons. On parchment paper-lined baking sheets. Cut ribbons into 2-inch pieces.

3.  Bake at 350° for 12 minutes or until lightly browned. Move to wire racks to cool.

4.  Salt and add additional Seasonings to taste and enjoy!

Street Corn

Grilled Street Corn

The Ultimate Mexican Street Food Dish

PREP — 10 Minutes    COOK — 15 Minutes

ingredients

• 4 ears of corn

• 1 tsp Schultz’s Gourmet Premium Seasoning and Rub + more for serving

• 1/2 cup crumbled cotija or feta cheese

• 1/4 cup sour cream or Mexican crema

• 1/4 cup mayonnaise

• 1/4 cup freshly chopped cilantro

• 2 limes cut into wedges

directions

1.  Set gas grill to high heat. Cover grill and allow to preheat for 5 minutes.

2.  While the grill is heating, combine mayonnaise, sour cream, cheese, Schultz’s Seasoning & Rub, and cilantro in a small bowl. Set aside.

3.  Remove the husks of the corn leaving the core attached.

4.  Place corn directly on hot grill. Rotate occasionally until corn starts to get slightly charred on all sides. About 8-10 minutes

5.  Remove the corn from the grill and evenly coat the cheese mixture on all sides. 

6.  Sprinkle with extra cheese and Schultz’s Seasoning & Rub. Serve with lime wedges and enjoy!

ingredients

• 1 lb fresh asparagus spears, trimmed

• 1 tbsp olive oil

Schultz’s Seasoning & Rub, to taste

• 1/4 cup Schultz’s Chipotle Cooking Hot Sauce 

• 1/2 cup mayonnaise

1.  Set grill (or stove) to high heat. Cover and allow to preheat for 5 minutes.

2. Lightly coat the asparagus with olive oil. Season with Schultz’s Seasoning & Rub.

3.  Grill over high heat for 2-3 minutes, or to desired tenderness

4.  Mix Chipotle Cooking Hot Sauce with mayonnaise in small bowl. Use sauce for dipping or spread 1 tbsp on each serving. Enjoy!

BBQ Pulled Chicken Sandwich

TOTAL — 110 Minutes  SERVINGS —Four

ingredients

• 2lbs boneless skinless chicken breast

• 2 tbsp Schultz’s Gourmet Premium Seasoning and Rub

• 1 cup Schultz’s Gourmet Sweet Hickory BBQ Sauce

• 1 cup shredded purple cabbage

• 1/2 cup shredded carrot

• 1/4 cup mayonnaise

• 1 tbsp white wine vinegar

• 1 tsp celery seed

• Salt and pepper to taste

• 1 tbsp Schultz’s Gourmet Spicy Original Cooking Hot Sauce (optional)

directions

1.  Preheat oven to 325°F

2.  In a large pot, heat 1 tbsp cooking oil of choice

3.  Rub chicken breasts with seasoning. Add to pot and pour bbq sauce over the top.

4.  Bring to a simmer, then remove from heat, cover and place in over for about 90 minutes (or until chicken is completely tender)

5.  While chicken is cooking, add shredded purple cabbage, carrot, mayo, white wine vinegar, salt, pepper, celery seed and hot sauce to a large bowl. Stir well to coat evenly. Cover and let sit to soak up flavors while chicken cooks.

6.  When chicken is finished, remove chicken breasts from pot using tongs and put in large bowl or on cutting board. Using two large forks, shred the meat.

7.  Return chicken to pot and stir to coat evenly with sauce.

8.  Serve on bun of choice and enjoy!

Breakfast Tacos with Green Chili Lime

Start your morning with a kick!

ingredients

• 3 corn tortillas

• 4 eggs

• 2 tbsp shredded cheddar cheese

• 1/2 tsp salt

• 1/2 sliced avocado

• Sliced tomatoes

• Sliced radishes (optional)

Schultz’s Green Chili Lime Cooking Hot Sauce

directions

1. Heat a small nonstick pan over medium-low. Crack eggs into a bowl and whisk. Add in salt and shredded cheese. Pour into heated pan and scramble over low until eggs are fully cooked.

2.  Heat tortillas in a skillet.

3.  Top tortillas with scrambled eggs, sliced avocado, tomatoes, radishes and a generous drizzle of green chili lime sauce!
