Taco Tots Burrito

Taco Tots Burrito

All the best breakfast foods wrapped in one tortilla.

PREP — 3 Minutes   COOK — 27 Minutes   

TOTAL — 30 Minutes  SERVINGS — Six

ingredients

• 1 bag extra-crispy tater tots

• 12 slices of bacon

• 12 eggs

• 1 small white or red onion

• 2-3 jalapeño peppers

• 2 cloves garlic

• 4 vine tomatoes

• 2-3 scallions

• 2 limes

• 1 can Pinto Beans

• 1/2 lb. Pepper Jack, Cheddar or Monterey Jack

• Handful Cilantro, chopped

• 6 large flour tortillas

• 2-4 tsps Schultz’s Gourmet Seasoning & Rub

• Any Schultz’s Cooking Hot Sauce to drizzle on top

 

directions

1. Preheat oven to 425°F and gather ingredients. Line a sheet pan with parchment paper and arrange the tots in a single layer. Place tray in the oven and bake 20-25 minutes. Give the pan a shake once to turn tots while they cook.

2.  While the tots cook, peel and finely chop the onion. Seed and finely chop the jalapeños. Peel garlic. Set a third of the onion, the pepper and garlic aside for the beans. Seed and dice the tomatoes, and finely chop the scallions. Place remaining onions and peppers in a bowl. Add salt and juice from 1 of the limes. Add the tomatoes, scallions and cilantro; toss to combine.

3.  Arrange bacon on slotted pan or rack lined baking sheet lined with foil. Bake bacon 15-18 minutes on rack below tots until brown and crispy.

4.  Heat a small skillet over medium heat. Add oil, and reserved vegetables. Add beans to a food processor with a little water. Add about 1 tsp of Schultz’s Seasoning & Rub and juice from the remaining lime. Transfer beans to the skillet and heat through.

5. Remove bacon, allow to cool and then chop. Grate cheese on larger holes of box grater. Remove Tots and toss with Schultz’s Seasoning & Rub to coat.

6. Crack eggs into bowl and whisk up with salt, pepper and 2 tsps of Schultz’s Cooking Hot Sauce. Scramble the eggs on a large skillet over medium-high heat to desired doneness.

7. Char tortillas over flame or in a dry pan over high heat. About 30 seconds to 1 minute on each side.

8. Build burritos: beans, eggs, cheese, chopped bacon, taco tots, pico de gallo. Tuck in sides and wrap and roll the burritos tightly. Cut each in half to serve. Garnish with a drizzle of Schultz’s Cooking Hot Sauce if desired. Enjoy!

Spicy Shrimp and Grits

Our instructions for a southern classic.

PREP — 5 Minutes   COOK — 28 Minutes   

TOTAL — 33 Minutes  SERVINGS — Two

ingredients

• 3 cups Whole Milk

• 1 cup Water

• 1/3 cup Schultz’s Gourmet Spicy Original Cooking Hot Sauce

• 1 lb. peeled and deveined Shrimp

• 1 cup Grits

• 4 tbsp Butter

• 1 1/2 tsp Kosher Salt

• 1/2 cup grated Sharp Cheddar Cheese

• 2 cloves Garlic, minced

• 2 tbsp Oil or Butter

• Fresh Parsley for garnish

 

directions

1. Bring milk, water and salt to a boil in a large saucepan. Reduce heat slightly, then slowly add grits to the liquid, whisking the whole time. Continue to whisk for a minute until no clumps remain. Reduce the heat to low, cover and cook for 15-20 minutes, stirring well every 2-3 minutes.

2.  When finished cooking, remove from heat and stir in butter and cheddar cheese until well incorporated. Cover and set aside.

3.  In a large skillet, heat oil to medium – medium high. Add shrimp and sauté 2-3 minutes, or until they start to turn pink. Add garlic, stir well, then add Schultz’s Spicy Original Cooking Hot Sauce. Stir well, then continue to cook 3-5 minutes.

4.  Remove from heat. Plate grits in a shallow bowl, top with shrimp and garnish with fresh parsley. Enjoy!

Sweet Heat Glazed Salmon Sushi

Schultz’s, Sushi Rice and Delicious Salmon

PREP — 15 Minutes    COOK — 50 Minutes   

TOTAL — 1 Hour 5 Minutes  SERVINGS — Six

ingredients

• Sushi Rice (or short grained rice)

• 1 Cucumber

• 1 Carrot

• 1 block Cream Cheese

• Nori

Sweet Heat Glazed Salmon

• Rolling Mat

 

directions

1.  Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2-3 times or until the water is clear. Place the rice and 2 cups water into a medium saucepan and place over high heat. Bring to a boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.

2.  While rice cooks, cook the salmon by following our Sweet Heat Glazed Salmon recipe. Prep by cutting the cucumber, and carrot into 3 inch julienne strips and set the cream cheese out so it softens. Combine the rice vinegar, sugar and salt and heat in the microwave for 30-45 seconds. Transfer the rice into a large wooden or glass bowl and add the vinegar mixture. Fold thoroughly combine, allow to cool to room temperature.

3.  On a rolling mat, place one sheet of nori with the rough side facing upwards. Wet your hands and grab a handful of rice and place it on the nori. Spread the rice evenly throughout the nori without mashing the rice down. Season rice with a pinch of sesame seeds, then flip over so the nori is facing upwards.

4.  Arrange the cream cheese, carrots, cucumber and salmon in horizontal rows 1 inch from the bottom of the nori. Grabbing both nori and the mat, roll the mat over the filling so the extra space at the bottom touches the other side, squeezing down to make a nice tight roll. Squeeze down along the way to form the roll into its shape.

5.  Transfer the roll onto a cutting board. Rub a knife on a damp paper towel before slicing the roll into six equal portions. Enjoy!

Buffalo Chicken & Bleu Cheese Sushi

A Major Twist on a Major Classic

• 1 tbsp Sugar

• 1 tbsp Salt

• 1 stalk Celery

• 1 Carrot

• 3 oz. Bleu Cheese crumbles

• 3 Large Eggs

• 2/3 cup Milk

• 1 tsp Schultz’s Gourmet Seasoning & Rub

• 1 oz. Sweetwood Smokehouse Blueberry Maple Fatty Stick

• 2 oz. Goat Cheese

• 1 cup White or Baby Bella Mushrooms

• 2 cups Spinach

• 1 tsp Nutmeg

• 1 tbsp Maple Syrup

• Pie Crust

 

Schultz’s Sauce:

• 1/2 cup Schultz’s Gourmet Sweet Hickory BBQ Sauce

• Mayonnaise

• 1 tsp Schultz’s Gourmet Seasoning & Rub

1.  Preheat oven to 475°F. While oven preheats, weigh pie crust down and bake for 10 minutes or until slightly golden. It helps to poke a few holes in the base so the bottom doesn’t rise. Wash mushrooms and spinach. Slice the mushrooms and the fatty stick.

2.  Heat 2 tsp oil over medium-high heat. Sauté mushrooms and spinach until wilted and soft. Roughly chop the mushrooms and spinach into bite sizes pieces. In the same pan, add the sliced meat and sauté until slightly browned.

3.  Place 1/3 of your goat cheese at the bottom of your slightly baked pie crust. In a bowl, whisk eggs and milk together. Add solid ingredients, maple syrup, nutmeg, and Schultz’s seasoning and pour it all into your crust. Add remaining goat cheese to the top of your quiche.

4.  Bake for 30-40 minutes until the filling is set and your crust is golden brown. While it cooks, stir the sauce ingredients until well mixed. Remove from oven and allow to cool. Top with sauce and Enjoy!

1.  Preheat oven to 375°F. Trim and halve brussels sprouts. Mince peppered turkey jerky either by knife or with a chop setting on a blender or food processor and place aside. Mince garlic and place in a bowl with the brussels sprouts along with 2 tbsp of olive oil.

2.  Bake on a nonstick pan for 15-20 minutes or until brussels sprouts start to brown. Remove pan and sprinkle the turkey jerky and green chili lime sauce onto the brussels sprouts. Cook for an additional 2-3 minutes.

3.  Garnish with additional cheddar cheese, green chili lime sauce and salt and pepper to taste. Enjoy!

Seasoned Steak Taco Salad

Finally! A salad that’s actually a meal.

ingredients

• 1 head Romaine Lettuce

• 1 large Tomato

• 2 Jalapeños

• 1 yellow Bell Pepper

• 1 Avocado

• 1/3 cup shredded Mexican Cheese Blend

• 1 cup Black Beans

• 1 cup White Rice

• 5.25oz of Sweetwood Smokehouse Peppered Steak Bites

Schultz’s Gourmet Green Chili Lime Cooking Hot Sauce

directions

1.  Bring 2 cups of water, with a pinch of salt, to a boil in a small saucepan with a lid. Add 1 cup of rice, stir briefly to break up clumps and cover the pot with the lid. Reduce the heat and let simmer for 20 minutes.

2.  While rice is cooking, separate the romaine leaves and rinse. Shake off excess until dry. Gather the leaves into a loose bundle and cut across to make rectangular bite-sized pieces, 1-2″ wide. Drain black beans in colander and set aside. Dice the bell pepper, jalapeño peppers. Be sure to leave some seeds in if you like it spicy! Chop tomato and peppered steak bites. Cut avocado into slices.

3.  After the rice has cooked for 20 minutes, turn the burner off and remove the pan from heat. Let the rice sit for an additional 5 minutes with the lid on. Then spread the rice out on a pan to cool quickly for the salad.

4.  Assemble your salad by layering all the ingredients on top of the romaine lettuce. Dress the salad with Schultz’s Green Chili Lime Cooking Hot Sauce. Top with shredded cheese and season to taste with Schultz’s Seasoning and Rub. Enjoy!

• 3 Celery Sticks

• 1 Yellow Pepper

• 1 White Onion

• 1 Large Sweet Potato

• 2 Sweetwood Smokehouse Original Turkey Fatty Stick

• 2 tbsp Olive Oil

• 1 Jalapeño

• 1 bunch Cilantro

 

Schultz’s Sauce:

• 2 tbsp Schultz’s Gourmet Sweet Heat Sauce

• 6 oz. Plain Yogurt

 

directions

1.  Dice pepper, onion, celery and turkey fattys. Heat olive oil in a pan over high-heat. We always prefer using a well seasoned cast iron pan. Add pepper, onion and celery and sauté for 5-6 minutes. Add turkey fattys and cook for an additional 5 minutes or until the turkey starts to brown.

2.  Reduce heat to medium. Add diced Sweet Potatoes and 1/2 cup of water to the pan, season with salt and pepper. Cover and let cook for 10 minutes or until the sweet potatoes are soft.

3.  Mix Schultz’s sauce and plain yogurt together. Add more sauce to strengthen the flavor based on your preference.

4.  Once the hash has cooked and the potatoes are done, garnish with sauce, cilantro and jalapeño. Enjoy!

• 2 oz. Goat Cheese

• 1 cup White or Baby Bella Mushrooms

• 2 cups Spinach

• Pie Crust

 

Schultz’s Sauce:

• 1 tbsp Schultz’s Gourmet Chipotle Cooking Hot Sauce

• 1/4 cup Mayonnaise

• 1 tsp Schultz’s Gourmet Seasoning & Rub

Roasted Cranberry Pork Chops

Roasted Cranberry Pork Chops

…plus herb roasted potatoes!

PREP — 15 Minutes    COOK — 50 Minutes   

TOTAL — 1 Hour 5 Minutes  SERVINGS — Six

ingredients

• 4 Bone-In Pork Chops

• 1/2 cup Schultz’s Gourmet Sweet Hickory BBQ Sauce

• 2 tbsp Schultz’s Gourmet Tangy Mustard BBQ Sauce

• 1/2 tsp Salt

• Freshly Ground Black Pepper

• 3/4 cup Red Wine

• 1 1/2 cup Fresh Cranberries

• 3/4 cup Cranberry Juice

• 1/4 tsp Cinnamon

• 2 tbsp Olive Oil

• 3 tbsp Butter

• 3 tbsp Brown Sugar

• 2 sprigs each Thyme and Rosemary

 

Herb Roasted Potatoes:

• 1 lb. Small Potatoes

• 1 tbsp Olive Oil

• 1/2 tsp Kosher Salt

• 1/4 tsp Black Pepper

• 1 tbsp each Finely Chopped Fresh Thyme and Rosemary

 

directions

1.  Preheat oven to 400°F . Wash and dice potatoes. Pat dry with a paper towel to remove excess moisture. Toss with olive oil, salt, pepper and herbs. Transfer to baking sheet and roast for 35-40 minutes, or until slightly crisp. When potatoes are finished, increase oven temperature to 450°F for pork chops.

2.  Meanwhile, in a small bowl, whisk together both BBQ sauces, brown sugar, salt, pepper and cinnamon. Brush each pork chop with mixture on both sides. Reserve leftover sauce.

3.  Heat oil in a large skillet to medium-high. Add pork chops and sear on each side until browned, about 3 minutes on each side. Remove pork chops from skillet and set aside. Reduce heat to medium.

4.  Add red wine, cranberry juice and reserved BBQ marinade to skillet and stir to combine. Add butter, cranberries and herbs and reduce for about 5 minutes, stirring frequently to prevent burning. Return pork chops to pan, then transfer pan to oven for 12-13 minutes.

5.  Remove from oven and serve with sauce spooned over the top of the pork chops. Enjoy!
