ingredients

• 1 clove garlic, minced

• 1 tablespoon butter

• 1 cup ketchup

• 2 tablespoons Schultz’s Sweet Heat Cooking Sauce

• 1 tsp Schultz’s Seasoning and Rub

directions

1. In a saucepan over medium heat, lightly saute garlic in butter, about 2 minutes. Add ketchup, Schultz’s Sweet Heat Sauce and Seasoning to the saucepan. Cook another 5 minutes. Remove from heat. Cool before serving.

Mexican Pasta Salad

Mexican pasta salad with creamy avocado dressing.

ingredients

Dressing:

• ½ ripe avocado

• 1/4 cup Schultz’s Green Chili Lime Cooking Sauce

• 2 tablespoons mayonaise

• 1 small clove garlic, grated

• 1/4 teaspoon Schultz’s Seasoning & Rub

Pasta Salad:

• 8 ounces whole-wheat fusilli (about 3 cups)

• 1 cup halved grape or cherry tomatoes 

• 1/2 cup canned black beans, rinsed

• 1/2 cup corn, fresh or frozen (thawed)

• 1/2 cup shredded Cheddar cheese 

• 1/4 cup diced red onion

• 1/4 cup chopped fresh cilantro

directions

1. To prepare dressing: Combine avocado, mayonnaise, Schultz’s Gourmet Seasoning, Green Chili Lime sauce, garlic and cumin in a mini food processor. Puree until smooth.

2. To prepare pasta salad: Cook pasta in a large pot of boiling water according to package directions. Drain, rinse with cold water, then drain again. Transfer to a large bowl. Stir in tomatoes, beans, corn, Cheddar, onion and cilantro. Add the dressing and toss to coat. Enjoy!

Spicy Cheddar Cornbread Muffins

Spicy cornbread muffins baked with sharp cheddar.

ingredients

1 cup all-purpose flour.

3/4 cup yellow cornmeal

• 1 tablespoon granulated sugar

• 1 teaspoon Schultz’s Gourmet Seasoning

• 4 teaspoons baking powder

• 2 teaspoons dried chives

• 1/4 cup minced fresh parsley

• 1 cup grated sharp cheddar cheese

• 1 cup milk

• 1/4 cup olive oil

• 2 large eggs

directions

1.  Preheat oven to 400°F. Spray a 12-cup muffin tin (or two 6-cup tins) with nonstick cooking spray.

2.  In a medium-size mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, Schultz’s Gourmet Seasoning, chives, parsley, and cheddar until thoroughly combined.

3.  In another mixing bowl, whisk together milk, olive oil, and eggs. Pour over the dry mixture from step 2 and stir. Continue stirring until combined and no lumps remain. Do not over mix!

4.  Fill each muffin cup until about two thirds full. Place the muffin tray on the center rack and bake for 15-17 minutes or until golden brown. Remove from oven.

5.  Let cool for about 3-4 minutes before removing the cornbread muffins from the muffin tin. Serve and enjoy!

Giant Soft Pretzel with Spicy Mustard Dip

ingredients

Pretzel Dough Ingredients

3 tsp Instant Dry Yeast

• 1 1/2 cups Warm Water

• 2 tbsp Granulated White Sugar

• 4 cups All Purpose Flour

• 1 tsp Salt

 

        Pretzel Crust Ingredients

• 1 cup Water

2 tsp Baking Soda

• Coarse Sea Salt

1/2 stick Butter, melted

 

Spicy Mustard Dip Ingredients

• 1/2 cup Schultz’s Tangy Mustard Sauce

• 1 tbsp Honey

• 2 tbsp Coarse Mustard Seed

directions

1.  In a large bowl, combine the yeast, warm water and sugar. Mix until frothy, and add in the flour and salt. Knead until smooth.

2.  Grease a second bowl with non-stick cooking spray, place the dough in and cover with greased plastic or a clean kitchen cloth. Let rise for 30 minutes in a warm place.

3.  Preheat oven to 425° and line baking sheet with parchment paper or spray with non-stick cooking spray. Divide the dough into 8 equal parts. Roll each part into 25-26″ long ropes and form into a pretzel shape. (If you don’t stretch it long enough, you will wind up with pretzel balls rather than the traditional pretzel figure.)

4.  In a shallow bowl, combine water and baking soda. Submerge each pretzel in the water and then place on the prepared baking sheet. Sprinkle generously with salt. Let the pretzels rest for 5-10 minutes.

5.  Bake for 10-15 minutes, or until golden brown. Brush each hot, baked pretzel with melted butter immediately after taking them out of the oven. Sprinkle again with coarse salt if desired. Enjoy!

Skillet Nacho Dip

ingredients

• 1 teaspoon olive oil

• 3/4 cup chopped red onion, divided

• 2 tablespoons seeded minced jalapeno

• 1 1/2 tablespoons all-purpose flour

• 2 teaspoons ground cumin

• 2 teaspoons chili powder

• 2 tablespoons Schultz’s Seasoning & Rub

• 2-3 tablespoons Schultz’s Green Chili Lime Cooking Sauce

• 2/3 cup unsalted beef stock

• 2 cooked ground beef patties, finely crumbled

• 1 cup drained unsalted canned pinto beans

• 2 ounces pre-shredded part-skim mozzarella cheese (about 1/2 cup)

• 2 ounces pre-shredded 2% reduced-fat Mexican-blend cheese (about 1/2 cup)

• 1/2 cup chopped tomato

• 1/2 cup chopped avocado

• tortilla chips

directions

1. Preheat broiler with oven rack in upper middle position

2. Heat oil in a large cast-iron skillet over medium-high. Add 1/2 cup onion and jalapeño to pan; sauté 4 minutes or until tender. Add flour, cumin, chili powder and Schultz’s Seasoning & Rub; cook 1 minute, stirring constantly. Add stock; bring to a boil. Reduce heat to medium, and stir in crumbled beef patties, beans, and Schultz’s Green Chili Lime; cook 2 minutes. Stir in mozzarella; cook 1 minute or until cheese is melted. Remove pan from heat.

3. Sprinkle Mexican-blend cheese over pan; broil 1 minute or until cheese is melted. Sprinkle remaining 1/4 cup red onion, tomato, and avocado over pan. Serve with tortilla chips.

Taco Tots Burrito

Taco Tots Burrito

All the best breakfast foods wrapped in one tortilla.

TOTAL — 30 Minutes  SERVINGS — Six

ingredients

• 1 bag extra-crispy tater tots

• 12 slices of bacon

• 12 eggs

• 1 small white or red onion

• 2-3 jalapeño peppers

• 2 cloves garlic

• 4 vine tomatoes

• 2-3 scallions

• 2 limes

• 1 can Pinto Beans

• 1/2 lb. Pepper Jack, Cheddar or Monterey Jack

• Handful Cilantro, chopped

• 6 large flour tortillas

• 2-4 tsps Schultz’s Gourmet Seasoning & Rub

• Any Schultz’s Cooking Hot Sauce to drizzle on top

1. Preheat oven to 425°F and gather ingredients. Line a sheet pan with parchment paper and arrange the tots in a single layer. Place tray in the oven and bake 20-25 minutes. Give the pan a shake once to turn tots while they cook.

2.  While the tots cook, peel and finely chop the onion. Seed and finely chop the jalapeños. Peel garlic. Set a third of the onion, the pepper and garlic aside for the beans. Seed and dice the tomatoes, and finely chop the scallions. Place remaining onions and peppers in a bowl. Add salt and juice from 1 of the limes. Add the tomatoes, scallions and cilantro; toss to combine.

3.  Arrange bacon on slotted pan or rack lined baking sheet lined with foil. Bake bacon 15-18 minutes on rack below tots until brown and crispy.

4.  Heat a small skillet over medium heat. Add oil, and reserved vegetables. Add beans to a food processor with a little water. Add about 1 tsp of Schultz’s Seasoning & Rub and juice from the remaining lime. Transfer beans to the skillet and heat through.

5. Remove bacon, allow to cool and then chop. Grate cheese on larger holes of box grater. Remove Tots and toss with Schultz’s Seasoning & Rub to coat.

6. Crack eggs into bowl and whisk up with salt, pepper and 2 tsps of Schultz’s Cooking Hot Sauce. Scramble the eggs on a large skillet over medium-high heat to desired doneness.

7. Char tortillas over flame or in a dry pan over high heat. About 30 seconds to 1 minute on each side.

8. Build burritos: beans, eggs, cheese, chopped bacon, taco tots, pico de gallo. Tuck in sides and wrap and roll the burritos tightly. Cut each in half to serve. Garnish with a drizzle of Schultz’s Cooking Hot Sauce if desired. Enjoy!

Spicy Shrimp and Grits

Our instructions for a southern classic.

PREP — 5 Minutes   COOK — 28 Minutes   

TOTAL — 33 Minutes  SERVINGS — Two

ingredients

• 3 cups Whole Milk

• 1 cup Water

• 1/3 cup Schultz’s Gourmet Spicy Original Cooking Hot Sauce

• 1 lb. peeled and deveined Shrimp

• 1 cup Grits

• 4 tbsp Butter

• 1 1/2 tsp Kosher Salt

• 1/2 cup grated Sharp Cheddar Cheese

• 2 cloves Garlic, minced

• 2 tbsp Oil or Butter

• Fresh Parsley for garnish

 

directions

1. Bring milk, water and salt to a boil in a large saucepan. Reduce heat slightly, then slowly add grits to the liquid, whisking the whole time. Continue to whisk for a minute until no clumps remain. Reduce the heat to low, cover and cook for 15-20 minutes, stirring well every 2-3 minutes.

2.  When finished cooking, remove from heat and stir in butter and cheddar cheese until well incorporated. Cover and set aside.

3.  In a large skillet, heat oil to medium – medium high. Add shrimp and sauté 2-3 minutes, or until they start to turn pink. Add garlic, stir well, then add Schultz’s Spicy Original Cooking Hot Sauce. Stir well, then continue to cook 3-5 minutes.

4.  Remove from heat. Plate grits in a shallow bowl, top with shrimp and garnish with fresh parsley. Enjoy!

Sweet Heat Glazed Salmon Sushi

Schultz’s, Sushi Rice and Delicious Salmon

PREP — 15 Minutes    COOK — 50 Minutes

ingredients

• Sushi Rice (or short grained rice)

• 1 Cucumber

• 1 Carrot

• 1 block Cream Cheese

• Nori

Sweet Heat Glazed Salmon

• Rolling Mat

 

directions

1.  Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2-3 times or until the water is clear. Place the rice and 2 cups water into a medium saucepan and place over high heat. Bring to a boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.

2.  While rice cooks, cook the salmon by following our Sweet Heat Glazed Salmon recipe. Prep by cutting the cucumber, and carrot into 3 inch julienne strips and set the cream cheese out so it softens. Combine the rice vinegar, sugar and salt and heat in the microwave for 30-45 seconds. Transfer the rice into a large wooden or glass bowl and add the vinegar mixture. Fold thoroughly combine, allow to cool to room temperature.

3.  On a rolling mat, place one sheet of nori with the rough side facing upwards. Wet your hands and grab a handful of rice and place it on the nori. Spread the rice evenly throughout the nori without mashing the rice down. Season rice with a pinch of sesame seeds, then flip over so the nori is facing upwards.

4.  Arrange the cream cheese, carrots, cucumber and salmon in horizontal rows 1 inch from the bottom of the nori. Grabbing both nori and the mat, roll the mat over the filling so the extra space at the bottom touches the other side, squeezing down to make a nice tight roll. Squeeze down along the way to form the roll into its shape.

5.  Transfer the roll onto a cutting board. Rub a knife on a damp paper towel before slicing the roll into six equal portions. Enjoy!

Buffalo Chicken & Bleu Cheese Sushi

A Major Twist on a Major Classic

• Sushi Rice (or short grained rice)

• 2 tbsp Rice Vinegar

• 1 tbsp Sugar

• 1 tbsp Salt

• 1 stalk Celery

• 1 Carrot

• 3 oz. Bleu Cheese crumbles

• Nori

• Rolling Mat

1.  Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2-3 times or until the water is clear. • 3 Large Eggs

• 2/3 cup Milk

• 1 oz. Sweetwood Smokehouse Blueberry Maple Fatty Stick

• 2 oz. Goat Cheese

• 1 cup White or Baby Bella Mushrooms

• 2 cups Spinach

• 1 tsp Nutmeg

• 1 tbsp Maple Syrup

• Pie Crust

 

Schultz’s Sauce:

• 1/2 cup Schultz’s Gourmet Sweet Hickory BBQ Sauce

• Mayonnaise

• 1 tsp Schultz’s Gourmet Seasoning & Rub

1.  Preheat oven to 475°F. While oven preheats, weigh pie crust down and bake for 10 minutes or until slightly golden. It helps to poke a few holes in the base so the bottom doesn’t rise. Wash mushrooms and spinach. Slice the mushrooms and the fatty stick.

2.  Heat 2 tsp oil over medium-high heat. Sauté mushrooms and spinach until wilted and soft. Roughly chop the mushrooms and spinach into bite sizes pieces. In the same pan, add the sliced meat and sauté until slightly browned.

3.  Place 1/3 of your goat cheese at the bottom of your slightly baked pie crust. In a bowl, whisk eggs and milk together. Add solid ingredients, maple syrup, nutmeg, and Schultz’s seasoning and pour it all into your crust. Add remaining goat cheese to the top of your quiche.

4.  Bake for 30-40 minutes until the filling is set and your crust is golden brown. While it cooks, stir the sauce ingredients until well mixed. Remove from oven and allow to cool. Top with sauce and Enjoy!
