Buffalo Beef Dip

Savory beef finds its way into a game-day favorite.

PREP — 20 Minutes    COOK — 30 Minutes   

TOTAL — 50 Minutes  SERVINGS — 8 to 10

ingredients

• 2 tablespoons olive oil

• 1/2 large yellow onion, chopped

• 1 cup of Schultz’s Spicy Original Cooking Sauce

• 1 (16-oz.) package of cooked, seasoned pulled beef

• 1 (8-oz.) package of cream cheese, softened

• 2 cups shredded cheddar cheese, divided

• Chopped fresh parsley, for garnish

• Celery sticks and tortilla chips, for serving

directions

1.  Preheat oven to 325°(F).

2.  Heat olive oil in a nonstick skillet over medium-high heat. Add the chopped yellow onion to the skillet and cook 4-5 minutes or until onion is tender.

3.  In a large bowl, combine the onion (cooked), Schultz’s Spicy Original or Sweet Heat cooking sauce, shredded beef, cream cheese, and 1 cup of cheddar cheese. Stir well making sure ingredients are evenly combined.

4.  Move your beef mixture from the large bowl and into an 8×8-inch baking dish. Bake at 325° for 15-18 minutes.

5.  Remove dish from the oven and top evenly with the remaining 1 cup of cheddar cheese; turn broiler on high. Broil for 2 minutes or until cheese is melted.

6.  Top evenly with parsley and serve with celery sticks, tortilla chips, or whatever your favorite dipper happens to be!

Chicken Enchilada-Stuffed Squash

The perfect balance of healthy and tasty.

ingredients

• 2 Acorn Squash, halved and center scooped out

• 2 tbsp Olive Oil

• 1 small Poblano Chile Pepper, seeded and diced

• 1 clove Garlic, grated

• 1/2 tsp Ground Cumin

• 1 tbsp Schultz’s Gourmet Seasoning

• 2 cups Chicken, shredded

• 1 cup Black Beans

• 1 cup Corn Kernels

• 5 oz. Red Enchilada Sauce

• 5 oz. Schultz’s Gourmet Chipotle Cooking Sauce

• 1 cup shredded Cheese

• 1 avocado, sliced for garnishing

• Fresh cilantro and sour cream for topping

directions

1.  Preheat the oven to 400°F.

2.  Place acorn squash halves flesh side up on a baking pan. Brush with 1 tbsp of olive oil and sprinkle with salt and pepper. Roast in the oven for 25 minutes or until centers are softened.

3.  Meanwhile, in a 2-quart saucepan, heat remaining tbsp of olive oil over medium-high heat. Add poblano and cook, stirring occasionally until the peppers begin to soften, about 3 minutes. Add the garlic, cumin, and Schultz’s Seasoning and cook an additional 3 minutes, stirring.

4.  Add chicken, enchilada sauce, Schultz’s Chipotle Cooking Sauce, corn kernels and beans to saucepan. Bring to a low boil, then reduce heat and simmer for about 10 minutes or until sauce thickens. Remove from heat.

5.  If you like cilantro, you can stir 1/2 cup fresh cilantro into the chicken mixture.

6.  Fill the centers of each squash half with the chicken and top with shredded cheese. Bake until the cheese is lightly golden and melted, 15-20 minutes.

7.  Garnish with avocado, sour cream and cilantro.

Grilled Cheese with Apple and Bacon

With contrasting flavors, this sandwich makes the mouth sing!

ingredients

• 3 tbsp Schultz’s Gourmet Sweet Heat Cooking Sauce

• Dijon Mustard (or Tangy Mustard BBQ Sauce)

• 8 slices of country bread (or sourdough)

• 8 slices sharp cheddar cheese

• 8 strips of bacon

• 1 granny smith apple, sliced thin (or honey crisp)

• Butter

directions

1.  Cook bacon on stove top in a skillet.

2.  Add 3 tbsp of Sweet Heat Cooking Sauce to coat bacon toward the last few minutes of cooking. If cooking bacon in an oven instead, baste on sauce with a brush.

3.  Spread dijon mustard on 4 slices of bread.

4.  Top each piece of bread with 2 slices of cheese, 2 slices of bacon and slices of apple. Top with the other slices of bread.

5.  Butter the sandwiches, then cook in a skillet (you can use the same one you cooked the bacon in, just drain the grease first) over medium-low heat until the cheese melts and the bread is golden, about 3 minutes per side.

Stuffed Squash Shell Pasta

A rich, oozy, easy pasta dinner.

ingredients

• 1 Medium Butternut Squash

• 2-3 tbsp Schultz’s Gourmet Cooking Sauce

• 2 tsps Olive Oil

• 1/2 tsp Salt, plus more to taste

• 12oz. Jumbo Shell Pasta

• 1 cup Ricotta Cheese

• 1 cup grated Parmesan Cheese

• 4 tsps Fresh Lemon Juice

• 2 tsp Lemon Zest

• 2 tsp Oregano

Pasta Jays Creamy Tomato Sauce

directions

1.  Preheat the oven to 400° and line a sheet tray with parchment paper.

2.  Cut the squash in half and remove the seeds. Place the squash onto the prepared sheet tray and season the flesh with olive oil and salt. Turn them so that they’re cut-side down and roast until tender, about 35-40 minutes. Let cool for 7 to 10 minutes, then scoop the flesh into a medium bowl and set aside (if you want to make this in advance, it can be stored for up to 2 days). Lower the oven to 375°.

3.  While the squash is roasting, boil the pasta. Bring a large pot of salted water to a boil. Add the jumbo shells to the water and cook for 9 minutes. Drain the pasta and rinse under cold running water for 1 minute.

4.  In a large bowl, lightly beat the egg and combine the ricotta, 3/4 cup of the Parmesan, garlic, Schultz’s Cooking Sauce, lemon juice and zest, oregano and cooled roasted squash. Taste and adjust the seasoning with salt. Fill each cooked pasta shell with 1 1/2 tablespoons of filling and snuggle the shells into a 9″x13″ baking dish.

5.  Cover the top with Pasta Jays Creamy Tomato Sauce, letting it spill down into the shells, and underneath. Top with remaining Parmesan and bake until golden brown and bubbling. Enjoy!

• 1 lb. Brussels Sprouts

• 2 cloves Garlic

1.  Preheat oven to 375°F. Trim and halve brussels sprouts. Mince peppered turkey jerky either by knife or with a chop setting on a blender or food processor and place aside. Mince garlic and place in a bowl with the brussels sprouts along with 2 tbsp of olive oil.

2.  Bake on a nonstick pan for 15-20 minutes or until brussels sprouts start to brown. Remove pan and sprinkle the turkey jerky and green chili lime sauce onto the brussels sprouts. Cook for an additional 2-3 minutes.

3.  Garnish with additional cheddar cheese, green chili lime sauce and salt and pepper to taste. Enjoy!

Seasoned Steak Taco Salad

Finally! A salad that’s actually a meal.

ingredients

• 1 head Romaine Lettuce

• 1 large Tomato

• 2 Jalapeños

• 1 yellow Bell Pepper

• 1 Avocado

• 1/3 cup shredded Mexican Cheese Blend

• 1 cup Black Beans

• 1 cup White Rice

• 5.25oz of Sweetwood Smokehouse Peppered Steak Bites

1.  Bring 2 cups of water, with a pinch of salt, to a boil in a small saucepan with a lid. Add 1 cup of rice, stir briefly to break up clumps and cover the pot with the lid. Reduce the heat and let simmer for 20 minutes.

2.  While rice is cooking, separate the romaine leaves and rinse. Shake off excess until dry. Gather the leaves into a loose bundle and cut across to make rectangular bite-sized pieces, 1-2″ wide. Drain black beans in colander and set aside. Dice the bell pepper, jalapeño peppers. Be sure to leave some seeds in if you like it spicy! Chop tomato and peppered steak bites. Cut avocado into slices.

3.  After the rice has cooked for 20 minutes, turn the burner off and remove the pan from heat. Let the rice sit for an additional 5 minutes with the lid on. Then spread the rice out on a pan to cool quickly for the salad.

4.  Assemble your salad by layering all the ingredients on top of the romaine lettuce. Dress the salad with Schultz’s Green Chili Lime Cooking Hot Sauce. Top with shredded cheese and season to taste with Schultz’s Seasoning and Rub. Enjoy!

• 3 Celery Sticks

• 1 Yellow Pepper

• 1 White Onion

• 1 Large Sweet Potato

• 1 Jalapeño

• 1 bunch Cilantro

 

Schultz’s Sauce:

• 2 tbsp Schultz’s Gourmet Sweet Heat Sauce

• 6 oz. Plain Yogurt

 

directions

1.  Dice pepper, onion, celery and turkey fattys. Heat olive oil in a pan over high-heat. We always prefer using a well seasoned cast iron pan. Add pepper, onion and celery and sauté for 5-6 minutes. Add turkey fattys and cook for an additional 5 minutes or until the turkey starts to brown.

2.  Reduce heat to medium. Add diced Sweet Potatoes and 1/2 cup of water to the pan, season with salt and pepper. Cover and let cook for 10 minutes or until the sweet potatoes are soft.

3.  Mix Schultz’s sauce and plain yogurt together. Add more sauce to strengthen the flavor based on your preference.

4.  Once the hash has cooked and the potatoes are done, garnish with sauce, cilantro and jalapeño. Enjoy!

Savory Turkey Quiche

ingredients

• 3 Large Eggs

• 2/3 cup Milk

• 1 tsp Schultz’s Gourmet Seasoning & Rub

• 1 oz. Sweetwood Smokehouse Turkey Fatty Stick

• 2 oz. Goat Cheese

• 1 cup White or Baby Bella Mushrooms

• 2 cups Spinach

• Pie Crust

 

Schultz’s Sauce:

• 1 tbsp Schultz’s Gourmet Chipotle Cooking Hot Sauce

• 1/4 cup Mayonnaise

• 1 tsp Schultz’s Gourmet Seasoning & Rub

 

directions

1.  Preheat oven to 475°F. While oven preheats, weigh pie crust down and bake for 10 minutes or until slightly golden. It helps to poke a few holes in the base so the bottom doesn’t rise. Once the pie crust comes out, sprinkle the rest of your seasoning on and it should stick to the warm crust. Use your fingers to push into the dough if needed. Wash mushrooms and spinach. Slice the mushrooms and the fatty stick.

2.  Heat 2 tsp oil over medium-high heat. Sauté mushrooms and spinach until wilted and soft. Roughly chop the mushrooms and spinach into bite sizes pieces. In the same pan, add the sliced meat and sauté until slightly browned.

3.  Place 1/3 of your goat cheese at the bottom of your slightly baked and seasoned pie crust. In a bowl, whisk eggs and milk together. Add solid ingredients and pour into your crust. Add remaining goat cheese to the top of your quiche.

4.  Bake for 30-40 minutes until the filling is set and your crust is golden brown. While it cooks, stir the sauce ingredients until well mixed. Remove from oven and allow to cool. Top with sauce and Enjoy!

Tangy Mustard Chicken and Apples

ingredients

• 8 Chicken Thighs

• 2-3 tbsp Schultz’s Gourmet Tangy Mustard BBQ Sauce

• 1 large Onion, cut into large chunks

• 2 cooking Apples (such as Cortland), cut into chunks

• 1 cup Chicken Broth

• Kosher Salt

• Ground Pepper

• 2 tbsp Olive Oil

• 1 1/2 tsp softened Butter

• 1 Tbs All-Purpose Flour

 

directions

1.  Preheat the oven to 450°

2.  Season the chicken with salt and pepper. Heat the olive oil in a large oven-proof skillet over medium-high heat. Working in bathes if necessary, add the chicken skin side down and cook until golden, about 6 minutes. Flip and cook 2-3 more minutes before transferring to a plate. Pour off all but 2 tablespoons of the drippings.

3.  Add the onion and apples to the skillet and season with salt and pepper. Cook until slightly softened, about 4 minutes. Mix the broth with the Tangy Mustard as best you can and add to the skillet and bring to a boil. Arrange the chicken, skin-side up, in the skillet. Transfer to the oven and roast until the chicken is cooked through, 15-20 minutes.

4.  Mix the butter and flour to form a paste. Bring the pan juices to a simmer, whisk in about half of the butter-flour mixture and boil to thicken, 2 minutes. Continue to cook, adding more of the butter-flour mixture as needed to make a slightly thick gravy.

5.  Use a slotted spoon to transfer the chicken, apples and onion to plates. Pour the gravy over the roasted chicken. Enjoy!

• 2 large Russet Potatoes

• Vegetable Oil

• Kosher Salt

1.  Wash potatoes well and slice very thinly—it’s best to use a mandoline for this. Soak potato slices in ice cold water for 15 minutes. Drain and pat dry between paper towels.

2.  While potatoes are soaking, heat 2-3 inches of vegetable oil in a deep dutch oven to medium high. Be sure not to over crowd the pan when you start frying your first batch—depending on the size of your pot, you can fry 15-20 minutes at a time. Flip each chip halfway through and fry until golden brown on both sides.

3.  Remove chips carefully and transfer to a paper towel lined wire rack. Sprinkle or toss with a pinch of salt and Schultz’s Seasoning and Rub. Enjoy!
