Grilled Chili Tofu

Grilled Chili Tofu

Perfectly seasoned tofu for the grill.

PREP — 12 Minutes    COOK — 8 Minutes

ingredients

• 14 ounces firm tofu

• 1 1/2 teaspoons salt, divided

• 1 teaspoon chili powder

• 1 tsp Schultz’s Seasoning and Rub

• 4 tablespoons vegetable oil, divided

• 3 teaspoons fresh lime juice

• 1 cup fresh corn kernels, lightly roasted

• 1 cup semi-ripe mango, peeled and diced

• 3/4 cup red onion, chopped

• 1/2 cup jalapeno peppers, seeded and chopped

• 1/4 cup fresh cilantro leaves, coarsely chopped

directions

1.  Drain and rinse tofu; place on a plate and pat dry with a clean paper towel. Cut tofu block into four equal pieces; set aside on plate.

2.  Combine 1/2 teaspoon salt with chili powder and Schultz’s Seasoning & Rub in a small bowl; mix well. Gently rub this mixture on both sides of tofu pieces.

3.  For relish, whisk 2 tablespoons oil with lime juice and 1 teaspoon salt in a medium-sized bowl. Add corn, mango, red onion, jalapeno, and cilantro. Toss, and set aside.

4.  Preheat your grill to medium-high heat. Oil racks with remaining oil. Place tofu pieces on rack, and cook, with grill lid down, for 2 minutes. Rotate 90 degrees, and cook with lid down, for another 2 minutes. Turn pieces over, and cook the other side the same way for 4 minutes.

5.  Carefully remove the tofu pieces from the grill, and place on four serving plates. Divide the relish into four equal parts, serve over tofu and enjoy.

The Perfectly Grilled Steak

A Recipe For Perfect Steaks

PREP — 20 Minutes    COOK — 8-15 Minutes

ingredients

• 4 (1 1/4-to-1 1/2-inch-thick) boneless rib-eye or New York strip steaks (about 12 ounces each) or filets mignons (8 to 10 ounces each), trimmed.

• 2 tablespoons extra-virgin olive oil.

• Kosher salt and freshly ground pepper.

1.  About 20 minutes before grilling, remove the steaks from the refrigerator and let sit, covered, at room temperature.

2.  Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).

3.  Transfer the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing.

Buffalo Chicken Pull Apart Bread

Buffalo Chicken Pull-Apart Bread

If there was ever a loaf of bread worthy of being an entree, this is it!

PREP — 10 Minutes    COOK — 40-50 Minutes   

TOTAL — 60 Minutes  SERVINGS — 4-6

ingredients

• 2 cups of cooked and shredded chicken

• 1 cup Schultz’s Spicy Original Cooking Sauce

• 2 1/2 cups of pepper jack cheese, shredded, divided

• 1/4 cup of chopped scallions

2 packages of pizza dough

• 1/2 cup of melted unsalted butter

• Ranch dressing for dipping (optional)

Green onions for garnish (optional)

directions

1.  Preheat oven to 350 degrees F.

2.  Roll out dough and cut into 3×3-inch squares. You should have 15 total squares; arrange in 3 rows of 5.

3.  In a bowl, toss together shredded chicken, Schultz’s Spicy Original Sauce, scallions, and half of the pepper jack cheese (1 1/4 cups).

4.  Brush butter on a dough square and begin to layer ingredients on top. Begin with Buffalo chicken mixture, followed by a sprinkling of cheese. Repeat with remaining squares, stacking one on top of the other, chicken side up.

5.  Brush the inside of a loaf pan with melted butter. Load stacked bread squares into loaf pan, and brush with remaining butter. Bake for 40 to 50 minutes until desired browning is achieved.

6.  Garnish with green onions and allow to cool. Serve from baking dish or other serving platter if desired.

Brisket Burnt Ends

Crisp on the outside, tender on the inside and bursting with flavor!

PREP — 10 Minutes    COOK — 1 Hour 40 Minutes

ingredients

• Brisket Point (from a low and slow smoked prime brisket, pre-cooked)

Hot Dayum Rub, or substitute Schultz’s Seasoning & Rub

• 2 cups Schultz’s Sweet Hickory Barbecue Sauce

• Honey

• Brown Sugar

• Butter

directions

1. Cube the cooked point of a brisket and place the cubes in a cooking tin or pan (grill-safe). Smother with Hot Dayum or Schultz’s Gourmet Rub. Add 2 cups of Schultz’s Sweet Hickory Barbecue Sauce and mix. Top with drizzled honey, brown sugar and place a few small cubes of butter on top.

2. Cover the tin with foil and cook on the grill at 275°F for about an hour, or until the cubes are tender and sticky. Once tender and when the sauce begins to thicken, turn the grill temperature up to 350°F. Leave for around 30-40 more minutes and let the meat crisp up and the sauce thicken more.

3.  Remove the tin pan from the grill and serve immediately. Enjoy!

Chipotle Seared Pork Chops with Cabbage Slaw

Chipotle Seared Pork Chops

Tender chops with a tangy cabbage slaw.

ingredients

• 7 tablespoons unsalted butter, plus more for the dish

• 4 boneless, center cut Pork Chops

• 1 Red Onion

• 1 1/2 lb Green Cabbage

• 1 lb Multi-Colored Potatoes

• 4 tbsp Apple Cider Vinegar

• 4 tbsp Whole Grain Dijon Mustard

• 2 tbsp Honey

• Ground Bay Leaf

• All Purpose Flour

• Ground Cayenne Pepper

• 1 tbsp Schultz’s Chipotle Cooking Sauce

• Salt and Pepper

• Olive Oil


directions

1. Heat a medium pot of salted water to boiling high. Cut the potatoes into bite sized pieces. Core and thinly slice the cabbage. Peel, halve and thinly slice the onion.

2. Add the potatoes to the pot of boiling water. Cook 10-12 minutes, or until tender when pierced with a knife. Drain thoroughly and put into a bowl. Add the mustard and drizzle with olive oil. Stir to combine with salt and pepper. 

3.  While the potatoes cook, in a large pan, heat 2 tbsp of olive oil on medium-high. Add the onion, season with salt and pepper. Cook 2-3 minutes. Add the cabbage, cook 1-2 minutes. Stir in the honey, vinegar and 2/4 cup of water. Loosely cover the pan with foil, reduce heat to medium. Simmer 12-14 minutes. Transfer to a large bowl.

4. Blend the spices bay leaf, cayenne pepper, salt, pepper and flour together until you have 4 tbsp (use majority flour). Brush each side of the pork chops with Chipotle sauce and coat with the spice mix.

5. Heat 2 tbsp of olive oil, add the pork chops and cook 4-6 minutes per side, or until golden brown and cooked through. Serve with cabbage and potato sides. Enjoy!

Nashville Hot Chicken Sandwich

Nashville Hot Chicken Sandwiches

Oven baked fried chicken sandwiches with a serious kick. 

PREP — 20 Minutes    COOK — 20-25 Minutes   

TOTAL — 45 Minutes (+6 hours to marinate)  SERVINGS — 6

ingredients

Marinade:

• 2 cups buttermilk

• 1/4 cup pickle brine

• 2 teaspoons Schultz’s Seasoning & Rub

• 1/3 cup Schultz’s Spicy Original or Sweet Heat Cooking Sauce

Oven Fried Chicken:

• 3 large chicken breasts, cut in half lengthwise

• 4 cups cornflakes

• 1/4 cup all purpose flour

• 2 teaspoons salt

• 1 teaspoon cayenne

• olive oil for brushing

Hot Chicken Cayenne Glaze:

• 3 tablespoons cayenne

• 2 tablespoons brown sugar

• 1 tablespoon paprika

• 1 teaspoon chili powder

• 1 tablespoon Schultz’s Seasoning & Rub

• Your favorite pickles and white bread, optional but highly recommended

• 3/4 cup vegetable oil

• 4 tablespoons butter

Sandwich Ingredients:

• 6 traditional hamburger buns

• sliced pickles

• coleslaw

• ranch dressing (optional)

Marinade:

1. For this recipe start with the marinade. Whisk together buttermilk, pickle brine, Schultz’s Spicy Original or Sweet Heat sauce and two teaspoons of Schultz’s Seasoning & Rub, and then pour it into a large zip top bag. Cut your chicken breasts in half lengthwise and add them to the buttermilk marinade.  Push out the excess air, seal the bag and move your chicken to the refrigerator to marinate for at least six hours but overnight is best. 

Oven Fried Chicken:

2. Once your chicken is marinated, remove your chicken breasts from the buttermilk and move to a baking rack to drain.  Add cornflakes to a food processor and pulse to create cornflake crumbs.  Move your cornflake crumbs to a large bowl and stir in the all purpose flour along with cayenne and salt. Preheat your oven to 450 degrees and line a baking pan with parchement paper or tin foil. Dredge the chicken pieces in the cornflake crumbs, pressing firmly to adhere the crumbs to all sides of the chicken.  Move the coated chicken to the baking pan and repeat until all chicken pieces are coated in cornflakes.  Lightly brush each of the chicken pieces with olive oil and bake for 20-25 minutes, turning your chicken over half way through the cooking time and continue cooking.

Hot Chicken Cayenne Glaze:

3.  As your oven fried chicken is baking, make your hot chicken cayenne glaze.  In a small saucepan, add vegetable oil and butter and heat over medium heat. Increase your temperature slightly until you just start to see little bubbles start to form.  Whisk together your seasoning and spices in a separate bowl and then slowly start whisking into your heated oil. Make sure to whisk you’re ingredients together well before adding to the oil.  Once your oven fried chicken is done, remove from the oven and using a basting brush, coat both sides of your chicken in the cayenne glaze. 

Nashville Hot Chicken Sandwich:

4.  Get your hamburger buns ready, removing the top half from the bottom. Take the bottom half of the bun and add a small amount of ranch dressing as the base of your sandwich. Next, place your seasoned chicken breast on top of the ranch. Add 2-3 slices of pickle. Finally, add a scoop of coleslaw on top of that and place the remaining half of your hamburger bun back on top. Serve and enjoy!

Breakfast Enchiladas

Baked Enchiladas Stuffed with Veggies and Eggs

ingredients

• 8 ounces salsa verde

• 8 ounces Schultz’s Green Chili Lime Cooking Sauce

• 1/4 cup cilantro

• 1/2 yellow bell pepper

• 1/2 red onion 

• 3 1/2 tablespoons olive oil (divided)

1/2 teaspoon ground cumin 

• 1/2 teaspoon ground coriander

1 cup canned black beans (drained and rinsed)

• 3/4 teaspoon salt (divided)

• Black Pepper

• 6 large eggs

• 6 ounces Mexican blend cheese (shredded, divided)

• 12 corn tortillas (6-inch)

• Diced Avocado

• Sour Cream

directions

1.  Preheat oven to 350°.

2.  Spoon about 1/2 cup of salsa verde into the bottom of a 9×13-inch casserole dish. Set aside.

3.  Finely mince the cilantro and set aside. Finely dice the peppers and onion.

4.  Set a large skillet over medium high heat and pour in olive oil. Once the oil is shimmering, add the peppers and onion.

5.  Cook the vegetables for 6-8 minutes, stirring frequently, until the vegetables are softened and slightly browned. Add the black beans, cumin, coriander, and salt and pepper, to taste. Cook, continuing to stir, for 1-2 minutes longer.

6.  Remove the skillet from the heat. Transfer the black bean and vegetable mixture to a large mixing bowl.

7.  Crack the eggs into a separate mixing bowl and beat until smooth.

8.  Return the skillet to the stovetop and reduce the heat to medium low. Add the olive oil.

9.  Once the oil is shimmering, pour the eggs into the skillet. Cook for 2-3 minutes, folding the eggs with a rubber spatula, until they are softly scrambled. Take care not to overcook the eggs. Season with about 1/2 teaspoon of salt, and black pepper, to taste.

10.  Transfer the eggs to the bowl with the black bean mixture, and add 1/3 of the shredded cheese. Mix with a rubber spatula to combine.

11.  Place one tortilla on a dinner plate. Spoon about 1/4 cup of the black bean and egg mixture into the center of the tortilla. Using clean hands, tightly roll the enchilada and place seam-side down into the sauced casserole dish. Repeat with the remaining tortillas.

12.  Once all the tortillas are rolled and arranged in the casserole dish, pour Schultz’s Green Chili Lime Cooking Sauce and the remaining salsa verde evenly over the enchiladas. Sprinkle the remaining cup of shredded cheese over the top.

13.  Bake the enchiladas for 22-25 minutes on the middle rack of oven, until the edges are bubbling and the cheese is melted and slightly golden brown.

14.  Check to see that enchiladas are done. Remove from oven or add time as needed.

15.  Sprinkle with the minced cilantro. Serve with diced avocado and sour cream, if desired.

Buffalo Chicken Cheese Ball

Now that’s a spicy cheese ball… .

PREP — 10 Minutes    COOK — 30 Minutes   

TOTAL — 40 Minutes  SERVINGS — 8 to 10

ingredients

• 8 ounces of cream cheese, softened

• 4 ounces of blue cheese, at room temperature

• 4 ounces of white cheddar, grated

• 1/2 cup of Schultz’s Spicy Original Cooking Sauce, divided

• 1/4 cup shredded chicken, cooked (we like using rotisserie chicken)

• 1/4 cup of diced celery

• 1/2 sleeve of Late July Classic Rich Crackers, crushed -OR- substitute 1 Cup Chopped Walnuts or Pecans

directions

1.  Combine cream cheese, blue cheese, and white cheddar in the bowl of a food processor; process 

2.  Heat a medium, nonstick skillet over medium heat. Add 1/4 cup of Schultz’s Spicy Original sauce and chicken. Cook, stirring frequently, until the chicken absorbs most of the sauce, about 2 minutes. Let cool to room temperature.

3.  Stir chicken mixture, remaining ¼ cup Schultz’s Spicy Original sauce, and celery into cream cheese mixture; mix until evenly incorporated. Scrape cream cheese mixture onto a parchment paper-lined baking sheet.

4.  Using lightly moistened hands, shape cream cheese mixture into a ball. Wrap in plastic wrap and refrigerate for 45 minutes to 1 hour, or until it can be easily rolled.

5.  Spread crushed crackers (or chopped nuts) evenly on a rimmed baking sheet. Roll the cheese ball in crackers, coating evenly. Place cheese ball on a serving platter; drizzle top with some more Spicy Original; serve with carrots, celery, crackers, etc.

BBQ Meatloaf

Savory meatloaf smothered in sweet tangy BBQ sauce.

PREP — 10 Minutes    COOK — 70 Minutes   

TOTAL — 80 Minutes  SERVINGS — 4

ingredients

1 1/2 lbs ground beef

• 1 cup breadcrumbs

• 1 cup milk

• 1 egg (beaten)

• 1 tbsp Worcestershire sauce

• 3 dashes liquid smoke (optional)

• 1 tbsp brown sugar

• 3 teaspoons Schultz’s Seasoning and Rub

• 1 cup Schultz’s Original BBQ Sauce

directions

1. Preheat the oven to 350. 

2. In large bowl, gently crumble ground beef then add all remaining meatloaf ingredients.

3.  Using your fingers gently combine all ingredients and meat being careful not to overly squish or press the meat (this makes the meatloaf dense).

4. Pour 1/4 cup of Schultz’s Original BBQ sauce in the bottom of a bread pan, or enough to evenly coat the bottom.

5. Add meatloaf to the bread pan and gently press into a solid loaf shape, pressing only hard enough for the meat to hold together.

6. Pour remaining 3/4 cup Schultz’s Original BBQ sauce evenly over the top of the meatloaf.

7. Place in the oven for 70 minutes, or until the internal temperature reaches 165 degrees.

8. Remove from oven, let cool for 5 minutes and serve.

Giant Soft Pretzel with Spicy Mustard Dip

Buttery soft snacking

PREP — 10 Minutes    COOK — 15 Minutes

ingredients

Pretzel Dough Ingredients

3 tsp Instant Dry Yeast

• 1 1/2 cups Warm Water

• 2 tbsp Granulated White Sugar

• 4 cups All Purpose Flour

• 1 tsp Salt

 

        Pretzel Crust Ingredients

• 1 cup Water

2 tsp Baking Soda

• Coarse Sea Salt

1/2 stick Butter, melted

 

Spicy Mustard Dip Ingredients

• 1/2 cup Schultz’s Tangy Mustard Sauce

• 1 tbsp Honey

• 2 tbsp Coarse Mustard Seed

directions

1.  In a large bowl, combine the yeast, warm water and sugar. Mix until frothy, and add in the flour and salt. Knead until smooth.

2.  Grease a second bowl with non-stick cooking spray, place the dough in and cover with greased plastic or a clean kitchen cloth. Let rise for 30 minutes in a warm place.

3.  Preheat oven to 425° and line baking sheet with parchment paper or spray with non-stick cooking spray. Divide the dough into 8 equal parts. Roll each part into 25-26″ long ropes and form into a pretzel shape. (If you don’t stretch it long enough, you will wind up with pretzel balls rather than the traditional pretzel figure.)

4.  In a shallow bowl, combine water and baking soda. Submerge each pretzel in the water and then place on the prepared baking sheet. Sprinkle generously with salt. Let the pretzels rest for 5-10 minutes.

5.  Bake for 10-15 minutes, or until golden brown. Brush each hot, baked pretzel with melted butter immediately after taking them out of the oven. Sprinkle again with coarse salt if desired. Enjoy!
