Mexican Pasta Salad

Mexican pasta salad with creamy avocado dressing.

ingredients

Dressing:

• ½ ripe avocado

• 1/4 cup Schultz’s Green Chili Lime Cooking Sauce

• 2 tablespoons mayonaise

• 1 small clove garlic, grated

• 1/4 teaspoon Schultz’s Seasoning & Rub

Pasta Salad:

• 8 ounces whole-wheat fusilli (about 3 cups)

• 1 cup halved grape or cherry tomatoes 

• 1/2 cup canned black beans, rinsed

• 1/2 cup corn, fresh or frozen (thawed)

• 1/2 cup shredded Cheddar cheese 

• 1/4 cup diced red onion

• 1/4 cup chopped fresh cilantro

directions

1. To prepare dressing: Combine avocado, mayonnaise, Schultz’s Gourmet Seasoning, Green Chili Lime sauce, garlic and cumin in a mini food processor. Puree until smooth.

2. To prepare pasta salad: Cook pasta in a large pot of boiling water according to package directions. Drain, rinse with cold water, then drain again. Transfer to a large bowl. Stir in tomatoes, beans, corn, Cheddar, onion and cilantro. Add the dressing and toss to coat. Enjoy!

Spicy Grilled Mango with Chiles and Crema

Char-grilled Mango with Chiles and Tangy Mexican Crema.

ingredients

• 3 tablespoons fresh lime juice, divided

• 1 thinly sliced green jalapeño pepper

• 1 thinly sliced red jalapeño pepper

• 5/8 teaspoon Schultz’s Seasoning & Rub

• 2 ripe peeled mangoes, cut into 1/3-inch-thick slices

• Cooking spray

• 3 tablespoons Mexican crema

• 3 1/4 cup cilantro leaves

directions

1.  Combine 2 tablespoons juice and jalapeños in a small bowl.

2.  Coat mango slices with cooking spray; sprinkle with Schultz’s Gourmet Seasoning & Rub. Heat a grill pan over high heat until smoking hot. Coat pan with cooking spray. Add mango to pan. Cook, without moving, 4 minutes or until well marked. Turn and cook 2 minutes; place on a platter.

3.  Combine remaining 1 tablespoon juice and crema in a small bowl, stirring with a whisk until smooth. Spoon jalapeños over mango. Drizzle with crema mixture; sprinkle with cilantro leaves.

Spicy Cheddar Cornbread Muffins

Spicy cornbread muffins baked with sharp cheddar.

ingredients

1 cup all-purpose flour.

3/4 cup yellow cornmeal

• 1 tablespoon granulated sugar

• 1 teaspoon Schultz’s Gourmet Seasoning

• 4 teaspoons baking powder

• 2 teaspoons dried chives

• 1/4 cup minced fresh parsley

• 1 cup grated sharp cheddar cheese

• 1 cup milk

• 1/4 cup olive oil

• 2 large eggs

directions

1.  Preheat oven to 400°F. Spray a 12-cup muffin tin (or two 6-cup tins) with nonstick cooking spray.

2.  In a medium-size mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, Schultz’s Gourmet Seasoning, chives, parsley, and cheddar until thoroughly combined.

3.  In another mixing bowl, whisk together milk, olive oil, and eggs. Pour over the dry mixture from step 2 and stir. Continue stirring until combined and no lumps remain. Do not over mix!

4.  Fill each muffin cup until about two thirds full. Place the muffin tray on the center rack and bake for 15-17 minutes or until golden brown. Remove from oven.

5.  Let cool for about 3-4 minutes before removing the cornbread muffins from the muffin tin. Serve and enjoy!

Buffalo Chicken Penne

ingredients

• 2 cups shredded chicken breasts

• 8oz cream cheese, cubed

• 1/3 cup Schultz’s Spicy Original Cooking Sauce

• 1/2 cup chicken broth

• 1 tsp paprika

• 1 tsp garlic powder

• 1/2 tsp black pepper

• 1/2 tsp kosher salt

• 3/4 cup blue cheese dressing

• 12 oz uncooked penne pasta

• green onions, chopped (optional)

• crushed red pepper flakes

directions

1. Heat a large skillet over medium heat

2. Add the cream cheese, Schultz’s Spicy Original Cooking Sauce, and chicken broth

3. Whisk until the mixture becomes creamy

4. Add the paprika, garlic powder, black pepper, salt and then stir to combine

5. Add the blue cheese dressing and stir to combine

6. Add the shredded chicken breast

7. Allow the sauce to simmer for 10 minutes over low heat

8. While the sauce is simmering, bring a large pot of water to boil on the stove. Add the penne pasta and cook according to package directions

9. Drain the pasta then add it to the cheesy buffalo chicken sauce and stir to combine

10. Top with diced green onions and crushed red pepper flakes

Cheesy Stuffed Taco Meatballs

Cheesy Stuffed Taco Meatballs

Warm melty cheese on the inside, crisp and crunchy on the outside.

PREP — 25 Minutes    COOK — 10 Minutes   

TOTAL — 35 Minutes   SERVINGS — 10 (3 meatballs per serving)

ingredients

• 3/4 pound ground beef

• 1 link fresh chorizo (3-4 ounces), casing removed

• 1 large egg

• 1/4 cup fine yellow cornmeal

• 2 tablespoons tomato paste

• 1 tablespoon chili powder

• 1.5 tablespoons Schultz’s Seasoning & Rub

• 1/2 teaspoon dried oregano

• 1/2 granulated onion

• 2 cups corn tortilla chips

• 2 ounces Cheddar, cut into 30 cubes just under 1/2 inch thick

• Shredded iceberg lettuce, guacamole, pico de gallo and sour cream, for serving

directions

1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment.

2. Mix together the ground beef, chorizo, egg, cornmeal, tomato paste, Schultz’s Seasoning & Rub, chili powder, cumin, oregano, granulated onion, 1 teaspoon salt and a few grinds of pepper with your hands in a large bowl. Scoop the mixture into tablespoon-sized portions. For each, press 1 cube of cheese into the center, press the meat around it to seal, and roll into a smooth ball.

3. Put the chips in a plastic bag, seal and crush with a rolling pin. Drop 3 or 4 meatballs at a time into the bag, and roll them around to lightly coat with the crushed chips. Arrange the coated meatballs on the prepared baking sheet, and bake until the outsides are browned and the cheese is melted inside, 10 to 12 minutes.

4. Serve the meatballs on a platter over a bed of shredded lettuce with guacamole, pico de gallo and sour cream on the side.

Giant Soft Pretzel with Spicy Mustard Dip

ingredients

Pretzel Dough Ingredients

3 tsp Instant Dry Yeast

• 1 1/2 cups Warm Water

• 2 tbsp Granulated White Sugar

• 4 cups All Purpose Flour

• 1 tsp Salt

 

        Pretzel Crust Ingredients

• 1 cup Water

2 tsp Baking Soda

• Coarse Sea Salt

1/2 stick Butter, melted

 

Spicy Mustard Dip Ingredients

• 1/2 cup Schultz’s Tangy Mustard Sauce

• 1 tbsp Honey

• 2 tbsp Coarse Mustard Seed

directions

1.  In a large bowl, combine the yeast, warm water and sugar. Mix until frothy, and add in the flour and salt. Knead until smooth.

2.  Grease a second bowl with non-stick cooking spray, place the dough in and cover with greased plastic or a clean kitchen cloth. Let rise for 30 minutes in a warm place.

3.  Preheat oven to 425° and line baking sheet with parchment paper or spray with non-stick cooking spray. Divide the dough into 8 equal parts. Roll each part into 25-26″ long ropes and form into a pretzel shape. (If you don’t stretch it long enough, you will wind up with pretzel balls rather than the traditional pretzel figure.)

4.  In a shallow bowl, combine water and baking soda. Submerge each pretzel in the water and then place on the prepared baking sheet. Sprinkle generously with salt. Let the pretzels rest for 5-10 minutes.

5.  Bake for 10-15 minutes, or until golden brown. Brush each hot, baked pretzel with melted butter immediately after taking them out of the oven. Sprinkle again with coarse salt if desired. Enjoy!

Deviled Eggs

Easy to prepare, hard to resist.

ingredients

• 6 eggs 

• 1/4 cup mayonnaise

• 1 teaspoon white vinegar

• 1 teaspoon yellow mustard

• 1/8 teaspoon salt

• freshly ground black pepper

Schultz’s Spicy Original or Sweet Heat Cooking Sauce

Schultz’s Seasoning & Rub, for garnish

• smoked spanish paprika, for garnish

directions

1. Place eggs in a single layer in a saucepan and cover with enough water that there’s 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute..

2. Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter.

3. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well. If you like things a little hotter, just add a teaspoon or two of Schultz’s Spicy Original or Sweet Heat Cooking Sauce to the mix. 

4. Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Add your garnish; paprika is the traditional garnish, but Schultz’s Seasoning and Rub goes great with this dish as well. Serve and enjoy!

There’s ordinary chips & dip, and then there’s this.

ingredients

• 1 teaspoon olive oil

• 3/4 cup chopped red onion, divided

• 2 tablespoons seeded minced jalapeno

• 1 1/2 tablespoons all-purpose flour

• 2 teaspoons ground cumin

• 2 teaspoons chili powder

• 2 tablespoons Schultz’s Seasoning & Rub

• 2-3 tablespoons Schultz’s Green Chili Lime Cooking Sauce

• 2/3 cup unsalted beef stock

• 2 cooked ground beef patties, finely crumbled

• 1 cup drained unsalted canned pinto beans

• 2 ounces pre-shredded part-skim mozzarella cheese (about 1/2 cup)

• 2 ounces pre-shredded 2% reduced-fat Mexican-blend cheese (about 1/2 cup)

• 1/2 cup chopped tomato

• 1/2 cup chopped avocado

• tortilla chips

directions

1. Preheat broiler with oven rack in upper middle position

2. Heat oil in a large cast-iron skillet over medium-high. Add 1/2 cup onion and jalapeño to pan; sauté 4 minutes or until tender. Add flour, cumin, chili powder and Schultz’s Seasoning & Rub; cook 1 minute, stirring constantly. Add stock; bring to a boil. Reduce heat to medium, and stir in crumbled beef patties, beans, and Schultz’s Green Chili Lime; cook 2 minutes. Stir in mozzarella; cook 1 minute or until cheese is melted. Remove pan from heat.

3. Sprinkle Mexican-blend cheese over pan; broil 1 minute or until cheese is melted. Sprinkle remaining 1/4 cup red onion, tomato, and avocado over pan. Serve with tortilla chips.

Taco Tots Burrito

Taco Tots Burrito

All the best breakfast foods wrapped in one tortilla.

TOTAL — 30 Minutes  SERVINGS — Six

ingredients

• 1 bag extra-crispy tater tots

• 12 slices of bacon

• 12 eggs

• 1 small white or red onion

• 2-3 jalapeño peppers

• 2 cloves garlic

• 4 vine tomatoes

• 2-3 scallions

• 2 limes

• 1 can Pinto Beans

• 1/2 lb. Pepper Jack, Cheddar or Monterey Jack

• Handful Cilantro, chopped

• 6 large flour tortillas

• 2-4 tsps Schultz’s Gourmet Seasoning & Rub

• Any Schultz’s Cooking Hot Sauce to drizzle on top

 

directions

1. Preheat oven to 425°F and gather ingredients. Line a sheet pan with parchment paper and arrange the tots in a single layer. Place tray in the oven and bake 20-25 minutes. Give the pan a shake once to turn tots while they cook.

2.  While the tots cook, peel and finely chop the onion. Seed and finely chop the jalapeños. Peel garlic. Set a third of the onion, the pepper and garlic aside for the beans. Seed and dice the tomatoes, and finely chop the scallions. Place remaining onions and peppers in a bowl. Add salt and juice from 1 of the limes. Add the tomatoes, scallions and cilantro; toss to combine.

3.  Arrange bacon on slotted pan or rack lined baking sheet lined with foil. Bake bacon 15-18 minutes on rack below tots until brown and crispy.

4.  Heat a small skillet over medium heat. Add oil, and reserved vegetables. Add beans to a food processor with a little water. Add about 1 tsp of Schultz’s Seasoning & Rub and juice from the remaining lime. Transfer beans to the skillet and heat through.

5. Remove bacon, allow to cool and then chop. Grate cheese on larger holes of box grater. Remove Tots and toss with Schultz’s Seasoning & Rub to coat.

6. Crack eggs into bowl and whisk up with salt, pepper and 2 tsps of Schultz’s Cooking Hot Sauce. Scramble the eggs on a large skillet over medium-high heat to desired doneness.

7. Char tortillas over flame or in a dry pan over high heat. About 30 seconds to 1 minute on each side.

8. Build burritos: beans, eggs, cheese, chopped bacon, taco tots, pico de gallo. Tuck in sides and wrap and roll the burritos tightly. Cut each in half to serve. Garnish with a drizzle of Schultz’s Cooking Hot Sauce if desired. Enjoy!

Spicy Shrimp and Grits

Our instructions for a southern classic.

PREP — 5 Minutes   COOK — 28 Minutes   

TOTAL — 33 Minutes  SERVINGS — Two

ingredients

• 3 cups Whole Milk

• 1 cup Water

• 1/3 cup Schultz’s Gourmet Spicy Original Cooking Hot Sauce

• 1 lb. peeled and deveined Shrimp

• 1 cup Grits

• 4 tbsp Butter

• 1 1/2 tsp Kosher Salt

• 1/2 cup grated Sharp Cheddar Cheese

• 2 cloves Garlic, minced

• 2 tbsp Oil or Butter

• Fresh Parsley for garnish

 

directions

1. Bring milk, water and salt to a boil in a large saucepan. Reduce heat slightly, then slowly add grits to the liquid, whisking the whole time. Continue to whisk for a minute until no clumps remain. Reduce the heat to low, cover and cook for 15-20 minutes, stirring well every 2-3 minutes.

2.  When finished cooking, remove from heat and stir in butter and cheddar cheese until well incorporated. Cover and set aside.

3.  In a large skillet, heat oil to medium – medium high. Add shrimp and sauté 2-3 minutes, or until they start to turn pink. Add garlic, stir well, then add Schultz’s Spicy Original Cooking Hot Sauce. Stir well, then continue to cook 3-5 minutes.

4.  Remove from heat. Plate grits in a shallow bowl, top with shrimp and garnish with fresh parsley. Enjoy!
