Grilled Blackened Shrimp Tacos

Grilled Blackened Shrimp Tacos

Give juicy shrimp tacos a Cajun flavor spin with spices and a quick sear on a hot grill. An easy avocado mash adds creaminess to cool off the spicy kick.

ingredients

• 1 Ripe Avocado

• 1 tablespoon lime juice

• 1 small clove garlic, grated

• 1/4 teaspoon salt

• 1 pound large raw shrimp (16-20 count), peeled and deveined

• 2 tablespoons Schultz’s Spicy Original Cooking Sauce

• 2 tablespoons Schultz’s Seasoning & Rub

• 8 corn tortillas, warmed

• 2 cups iceberg lettuce, chopped

• 1/2 cup fresh cilantro leaves

• 1/2 cup prepared pico de gallo

Schultz’s Green Chili Lime Cooking Sauce (to taste)

• 1/2 cup prepared pico de gallo

directions

1. Preheat grill to medium-high.

2. Mash avocado with a fork in a small bowl. Add lime juice, garlic and salt and stir to combine

3.  Pat shrimp dry. Toss the shrimp with Schultz’s Sauce & Seasoning in a medium bowl. Thread onto four 10- to 12-inch metal skewers. Grill, turning once, until the shrimp are just cooked through, about 4 minutes total.

4. Serve the shrimp in tortillas, topped with the guacamole, lettuce, cilantro and pico de gallo.

5.  Drizzle with Schultz’s Green Chili Lime Sauce. Enjoy!

Oven Fried Chicken with Peach BBQ Sauce

Oven fried chicken drumsticks with sweet peach barbecue sauce.

ingredients

Chicken Drumsticks

• 2 pounds chicken drumsticks (about 8)

• 1 teaspoons kosher salt

• 4 teaspoons Schultz’s Seasoning & Rub

Peach Barbecue Sauce

• 1 1/4 cup Schultz’s Sweet Hickory BBQ Sauce

• 1 tablespoon Schultz’s Spicy Original hot sauce

• 1/2 cup peach preserves

• 1 large fresh peach, pit removed, chopped

• 2 garlic cloves, chopped

directions

1. Preheat oven to 400°. (If using an air fryer, preheat is not necessary).

2. Pat chicken dry using paper towels. Mix together salt and Schultz’s Rub; season chicken evenly with spice rub. Line a rimmed baking sheet with parchment paper; place a baking rack on top of the parchment paper. Arrange the drumsticks on the baking rack. Bake at 400° for 35 minutes. If using an air fryer, layer the chicken in a “frying basket” and use preset for frying at 30 minutes. (You may have to make 2 batches).

3. To make the sauce, heat oil in a medium saucepan over medium-low heat. Add garlic to pan; cook for 2 minutes, stirring occasionally. Add Schultz’s Sweet Hickory BBQ sauce, Schultz’s Spicy Original, peaches and preserves to pan. Simmer over low heat for 8 minutes, stirring occasionally. Transfer mixture to a blender and blend until smooth.

4. Brush sauce over chicken immediately after removing it from the oven or air fryer. Serve immediately.

• 2 teaspoon Schultz’s Gourmet Seasoning & Rub

• 4 (6-oz.) grouper fillets

• 2 tablespoons canola oil

• 1/4 cup canola mayonnaise

• 1 1/2 tablespoons sweet pickle relish

• 1 tablespoon Schultz’s Gourmet Chipotle Cooking Sauce

• 1 tablespoon grainy mustard

• 1 tablespoon unsalted ketchup

• 4 (2-oz.) whole-wheat hoagie rolls, split

• 4 romaine lettuce leaves

• 8 plum tomato slices

directions

1. Preheat broiler to high with oven rack 8 inches from the heat.

2. Rub Schultz’s Gourmet Seasoning evenly over fillets.

3. Heat oil in a large nonstick skillet over medium-high. Add fillets to pan; cook 3 to 4 minutes on each side.

4. Combine mayonnaise, relish, Schultz’s Gourmet Chipotle Cooking Sauce, mustard and ketchup in a bowl. Arrange rolls, cut sides up, on a baking sheet; broil 1 minute or until toasted. Spread mayonnaise mixture over cut sides of rolls. Top bottom halves of rolls with lettuce, tomato, fillets, and top halves of rolls.

Oven Baked Baby Back Ribs

Sweet and tangy oven-baked baby back ribs.

PREP — 30 Minutes    COOK — 3 to 3 1/2 Hours

ingredients

1/4 cup lightly packed light brown sugar

• 3 tablespoons chili powder

• 2 tablespoons kosher salt

• 1 tablespoon paprika

• 1 tablespoon onion powder

• 1 tablespoon garlic powder

• 1 tablespoon dry mustard

• 1 tablespoon black pepper

• 2 (2 1/2 to 3-lb.) slabs bone-in baby back pork ribs

• 1/2 cup Schultz’s Tangy Mustard BBQ Sauce, divided

• 1 bottle Schultz’s Spicy Mesquite BBQ Sauce

directions

1. Preheat oven to 275°F, and place oven rack in middle of oven. Combine brown sugar, chili powder, salt, paprika, onion powder, garlic powder, dry mustard, and black pepper in a medium bowl; set aside.

2. Prepare the Ribs: Remove the thin outer membrane on back of ribs by loosening with a butter knife and pulling it off; discard. Brush each side of both slabs evenly with Schultz’s Tangy Mustard BBQ sauce; sprinkle liberally with spice mixture, patting gently to adhere. Wrap each slab individually in aluminum foil (or chill uncovered up to 12 hours).

3.  Place wrapped ribs on a wire rack set on a sheet tray lined with aluminum foil. Bake in preheated oven until tender, 2 to 2 1/2 hours. (Check for doneness by removing ribs from oven, unwrapping foil, and picking up 1 end with tongs. The ribs are ready when they bend and meat on top is tender and easily pulls apart.

4.  Unwrap ribs; discard foil and drippings. Place directly on wire rack, and spread 1/2 cup of the Schultz’s Spicy Mesquite BBQ Sauce on top of each slab. Return to oven, and cook at 275°F for 30 minutes.

5.  Remove from the oven and let cool for a few minutes before serving. Enjoy!

Spicy BBQ Lamb Chops

Spicy BBQ Lamb Chops

Grilled lamb chops with a spicy barbecue marinade.

PREP — 35 Minutes    COOK — 10 Minutes

ingredients

1/4 cup tomato sauce

• 2 tablespoons of Schultz’s Original BBQ Sauce

• 1 tsp Schultz’s Spicy Original Cooking Sauce

• 2 teaspoons Worcestershire sauce

• 1 tablespoon malt vinegar

1 teaspoon Dijon mustard

2 teaspoons brown sugar

2 pounds lamb chops  

directions

1.  In a large mixing bowl add the tomato sauce, Schultz’s Spicy Original, Schultz’s Original BBQ Sauce, Worcestershire sauce, vinegar, mustard, and brown sugar. Mix the ingredients together and then add your lamb chops to the mixture. Cover the bowl and place in the refrigerator for at least 20 minutes.

2.  Preheat an your grill to high heat and lightly oil the grates.

3.  Add the lamb chops to the grill and cook for about 10 minutes, turning frequently and basting often with the marinade. The internal temperature of the chops should reach a minimum of 145 °F (63 °C).

4.  Remove from the grill and serve while hot. Enjoy!

Mexican Pasta Salad

Mexican pasta salad with creamy avocado dressing.

ingredients

Dressing:

• ½ ripe avocado

• 1/4 cup Schultz’s Green Chili Lime Cooking Sauce

• 2 tablespoons mayonaise

• 1 small clove garlic, grated

• 1/4 teaspoon Schultz’s Seasoning & Rub

Pasta Salad:

• 8 ounces whole-wheat fusilli (about 3 cups)

• 1 cup halved grape or cherry tomatoes 

• 1/2 cup canned black beans, rinsed

• 1/2 cup corn, fresh or frozen (thawed)

• 1/2 cup shredded Cheddar cheese 

• 1/4 cup diced red onion

• 1/4 cup chopped fresh cilantro

directions

1. To prepare dressing: Combine avocado, mayonnaise, Schultz’s Gourmet Seasoning, Green Chili Lime sauce, garlic and cumin in a mini food processor. Puree until smooth.

2. To prepare pasta salad: Cook pasta in a large pot of boiling water according to package directions. Drain, rinse with cold water, then drain again. Transfer to a large bowl. Stir in tomatoes, beans, corn, Cheddar, onion and cilantro. Add the dressing and toss to coat. Enjoy!

Spicy Grilled Mango with Chiles and Crema

Char-grilled Mango with Chiles and Tangy Mexican Crema.

ingredients

• 3 tablespoons fresh lime juice, divided

• 1 thinly sliced green jalapeño pepper

• 1 thinly sliced red jalapeño pepper

• 5/8 teaspoon Schultz’s Seasoning & Rub

• 2 ripe peeled mangoes, cut into 1/3-inch-thick slices

• Cooking spray

• 3 tablespoons Mexican crema

• 3 1/4 cup cilantro leaves

directions

1.  Combine 2 tablespoons juice and jalapeños in a small bowl.

2.  Coat mango slices with cooking spray; sprinkle with Schultz’s Gourmet Seasoning & Rub. Heat a grill pan over high heat until smoking hot. Coat pan with cooking spray. Add mango to pan. Cook, without moving, 4 minutes or until well marked. Turn and cook 2 minutes; place on a platter.

3.  Combine remaining 1 tablespoon juice and crema in a small bowl, stirring with a whisk until smooth. Spoon jalapeños over mango. Drizzle with crema mixture; sprinkle with cilantro leaves.

Grilled Watermelon

Grilled Watermelon

Sweet, Caramelized Grilled Watermelon.

PREP — 10 Minutes    COOK — 6 Minutes

ingredients

• 1 small seedless red watermelon (about 5 lb.)

• 2 lemons

• 3/4 teaspoon kosher salt

• 1 teaspoon Schultz’s Seasoning & Rub

• 1/4 teaspoon ground red chili powder

directions

1.  Preheat grill to high (about 500°F).

2.  Slice watermelon crosswise into 5 (1 1/2-inch-thick) slices. Cut each slice into quarters to make 20 wedges. Grate 2 tablespoons lemon rind from lemons; set aside. Slice lemons into 1/2-inch-thick slices.

3.  Add watermelon wedges and lemon slices to grill grate; grill 1 minute on each side or until nicely charred. Place watermelon on a serving platter. Squeeze juice from a few charred lemon slices over watermelon; add remaining slices to platter. Sprinkle watermelon evenly with salt, Schultz’s Seasoning, chile powder, and lemon rind.

Tri Tip Enchiladas

Tri Tip Enchiladas

“I love mexican food and have never had anything come close in flavor as this sauce brought to the table.”

PREP — 35 Minutes    COOK — 2 Hours   

TOTAL — 2-2.5 Hours    SERVINGS — 8

ingredients

• 2.5 lb Tri-Tip

• 1 Red Onion

• 1 bunch, Cilantro

• 1 bunch, Green Onion

• 1 container, Cherry Tomatoes

• 1 bottle, 13oz. Schultz’s Green Chili Lime Sauce

• 1 pack, 8oz. Cream Cheese

• 1 pack, Cotija Cheese

• 1 can, 10.75oz. Campbells Cheddar Cheese Soup

• 1 can, 10.75oz. Campbells Cream of Chicken

• 8″ Flour Tortillas

directions

1. Smoke Tri-Tip at 225°F for 60 minutes (while you prep!) and then sear over direct heat, 500°F for 3 minutes per side. Allow to rest for 30 minutes and then slice across the grain and dice into small, bite-sized pieces.

2. Preheat oven to 375°F. Add Tri-Tip, cheese soup, cream cheese, cream of chicken and diced onions into a bowl and stir until thoroughly mixed. Spread a heaping 1/4 cup of this filling across the tortillas, roll tortillas and place seam-down in a greased baking pan or cast iron skillet.

3.  Once all enchiladas are in place, pour the Green Chili Lime Sauce covering the enchiladas completely. Add a few jalapeños to your pan for additional flavor and heat.

4.  Place in pre-heated oven and bake for 25 minutes. While enchiladas are baking, slice the rest of your toppings: green onion, cherry tomatoes, and optional toppings like black olives, jalapeños, sour cream can be added.

5.  Once the enchiladas are removed from the oven, your topping can be added. Feel free to drizzle with more Green Chili Lime for extra flavor. Enjoy!

Cilantro & Lime Chicken

Cilantro and Lime Chicken

Tender grilled chicken marinated with cilantro and lime.

ingredients

• 1/4 cup minced cilantro, plus 1 cup tender stems and leaves

• 2 tbsp. fresh lime juice, plus 1 Tbsp. lime zest

• 1/2 cup Schultz’s Green Chili Lime

• 2 cloves garlic, minced

• 4 bone-in, skin-on chicken breasts (about 3 pounds)

• 2 ears corn

• 2 tbsp. olive oil

• 1 (15 oz) can black beans, drained and rinsed

• 8 oz. cherry tomatoes, halved

• 6 oz. red cabbage, thinly sliced

• Queso fresco, to serve

• Lime wedges, to serve

directions

1.  Combine the minced cilantro, 1⁄2 cup Schultz’s Green Chili Lime Cooking Sauce, 1 tablespoon lime zest and the garlic in a bowl; add chicken and toss to coat. Cover bowl with plastic wrap and refrigerate 15 minutes.

2.  Light a grill; grill chicken and corn, turning as needed, until chicken is cooked through and corn is charred, 30 minutes for chicken and 15 minutes for corn. Transfer chicken to a cutting board to rest before carving. Let corn cool slightly, then slice kernels off into a large bowl. Add cilantro leaves, remaining lime juice and olive oil, beans, cherry tomatoes, cabbage, salt, and pepper and toss to combine.

3.  To serve, divide chicken and salad between plates; top salad with queso fresco and serve with lime wedges.
