Seared Pork Chop

Chipotle Seared Pork Chops with Cabbage Slaw

Chipotle Seared Pork Chops

Tender chops with a tangy cabbage slaw. 

PREP — 10 Minutes    COOK — 30-45 Minutes

ingredients

• 7 tablespoons unsalted butter, plus more for the dish

• 4 boneless, center cut Pork Chops

• 1 Red Onion

• 1 1/2 lb Green Cabbage

• 1 lb Multi-Colored Potatoes

• 4 tbsp Apple Cider Vinegar

• 4 tbsp Whole Grain Dijon Mustard

• 2 tbsp Honey

• Ground Bay Leaf

• All Purpose Flour

• Ground Cayenne Pepper

• 1 tbsp Schultz’s Chipotle Cooking Sauce

• Salt and Pepper

• Olive Oil


directions

1. Heat a medium pot of salted water to boiling high. Cut the potatoes into bite sized pieces. Core and thinly slice the cabbage. Peel, halve and thinly slice the onion.

2. Add the potatoes to the pot of boiling water. Cook 10-12 minutes, or until tender when pierced with a knife. Drain thoroughly and put into a bowl. Add the mustard and drizzle with olive oil. Stir to combine with salt and pepper. 

3.  While the potatoes cook, in a large pan, heat 2 tbsp of olive oil on medium-high. Add the onion, season with salt and pepper. Cook 2-3 minutes. Add the cabbage, cook 1-2 minutes. Stir in the honey, vinegar and 2/4 cup of water. Loosely cover the pan with foil, reduce heat to medium. Simmer 12-14 minutes. Transfer to a large bowl.

4. HBlend the spices bay leaf, cayenne pepper, salt, pepper and flour together until you have 4 tbsp (use majority flour). Brush each side of the pork chops with Chipotle sauce and coat with the spice mix.

5. Heat 2 tbsp of olive oil, add the pork chops and cook 4-6 minutes per side, or until golden brown and cooked through. Serve with cabbage and potato sides. Enjoy!

Buffalo Chicken Cheese Ball

Now that’s a spicy cheese ball… .

ingredients

• 8 ounces of cream cheese, softened

• 4 ounces of blue cheese, at room temperature

• 4 ounces of white cheddar, grated

• 1/2 cup of Schultz’s Spicy Original Cooking Sauce, divided

• 1/4 cup shredded chicken, cooked (we like using rotisserie chicken)

• 1/4 cup of diced celery

• 1/2 sleeve of Late July Classic Rich Crackers, crushed -OR- substitute 1 Cup Chopped Walnuts or Pecans

directions

1.  Combine cream cheese, blue cheese, and white cheddar in the bowl of a food processor; process 

2.  Heat a medium, nonstick skillet over medium heat. Add 1/4 cup of Schultz’s Spicy Original sauce and chicken. Cook, stirring frequently, until the chicken absorbs most of the sauce, about 2 minutes. Let cool to room temperature.

3.  Stir chicken mixture, remaining ¼ cup Schultz’s Spicy Original sauce, and celery into cream cheese mixture; mix until evenly incorporated. Scrape cream cheese mixture onto a parchment paper-lined baking sheet.

4.  Using lightly moistened hands, shape cream cheese mixture into a ball. Wrap in plastic wrap and refrigerate for 45 minutes to 1 hour, or until it can be easily rolled.

5.  Spread crushed crackers (or chopped nuts) evenly on a rimmed baking sheet. Roll the cheese ball in crackers, coating evenly. Place cheese ball on a serving platter; drizzle top with some more Spicy Original; serve with carrots, celery, crackers, etc.

BBQ Meatloaf

BBQ Meatloaf

Savory meatloaf smothered in sweet tangy BBQ sauce.

PREP — 10 Minutes    COOK — 70 Minutes   

TOTAL — 80 Minutes  SERVINGS — 4

ingredients

1 1/2 lbs ground beef

• 1 cup breadcrumbs

• 1 cup milk

• 1 egg (beaten)

• 1 tbsp Worcestershire sauce

• 3 dashes liquid smoke (optional)

• 1 tbsp brown sugar

• 3 teaspoons Schultz’s Seasoning and Rub

• 1 cup Schultz’s Original BBQ Sauce

directions

1. Preheat the oven to 350. 

2. In large bowl, gently crumble ground beef then add all remaining meatloaf ingredients.

3.  Using your fingers gently combine all ingredients and meat being careful not to overly squish or press the meat (this makes the meatloaf dense).

4. Pour 1/4 cup of Schultz’s Original BBQ sauce in the bottom of a bread pan, or enough to evenly coat the bottom.

5. Add meatloaf to the bread pan and gently press into a solid loaf shape, pressing only hard enough for the meat to hold together.

6. Pour remaining 3/4 cup Schultz’s Original BBQ sauce evenly over the top of the meatloaf.

7. Place in the oven for 70 minutes, or until the internal temperature reaches 165 degrees.

8. Remove from oven, let cool for 5 minutes and serve.

Giant Soft Pretzel with Spicy Mustard Dip

Buttery soft snacking

ingredients

Pretzel Dough Ingredients

3 tsp Instant Dry Yeast

• 1 1/2 cups Warm Water

• 2 tbsp Granulated White Sugar

• 4 cups All Purpose Flour

• 1 tsp Salt

 

        Pretzel Crust Ingredients

• 1 cup Water

2 tsp Baking Soda

• Coarse Sea Salt

1/2 stick Butter, melted

 

Spicy Mustard Dip Ingredients

• 1/2 cup Schultz’s Tangy Mustard Sauce

• 1 tbsp Honey

• 2 tbsp Coarse Mustard Seed

directions

1.  In a large bowl, combine the yeast, warm water and sugar. Mix until frothy, and add in the flour and salt. Knead until smooth.

2.  Grease a second bowl with non-stick cooking spray, place the dough in and cover with greased plastic or a clean kitchen cloth. Let rise for 30 minutes in a warm place.

3.  Preheat oven to 425° and line baking sheet with parchment paper or spray with non-stick cooking spray. Divide the dough into 8 equal parts. Roll each part into 25-26″ long ropes and form into a pretzel shape. (If you don’t stretch it long enough, you will wind up with pretzel balls rather than the traditional pretzel figure.)

4.  In a shallow bowl, combine water and baking soda. Submerge each pretzel in the water and then place on the prepared baking sheet. Sprinkle generously with salt. Let the pretzels rest for 5-10 minutes.

5.  Bake for 10-15 minutes, or until golden brown. Brush each hot, baked pretzel with melted butter immediately after taking them out of the oven. Sprinkle again with coarse salt if desired. Enjoy!

Pickle-Brined Fried Chicken

Pickle-Brined Fried Chicken

Hang on to your pickle juice!

PREP — 10 Minutes    COOK — 10 Minutes

Attention: You need to start this recipe 24 – 36 hours in advance.

ingredients

Nugget Ingredients

4 boneless chicken thighs

• 3 cups Buttermilk

• 2 cups Dill Pickle Juice

• 2 cups Flour

2-3 tbsp Schultz’s Seasoning and Rub

• 2 tbsp Cornstarch

• 8 cups Rice Bran Oil (for frying)

Coarse Salt

directions

1.  In a large bowl or jar, fully submerge chicken thighs in dill pickle juice. Cover and refrigerate for 6 – 24 hours.

2.  Remove chicken from pickle juice and fully submerge them in buttermilk in a second large bowl. Cover again and allow to sit for 1 – 12 hours.

3.  Finally, you’re ready to fry the chicken. Stir together flour, cornstarch, and Schultz’s Seasoning and Rub. Remove the chicken from the buttermilk, then dredge the chicken in the flour mixture, turning it to completely coat.

4.  In a Dutch oven or heavy pot, heat oil to 345° over high heat. (If this is your first time frying, it’s probably best to fry one thigh at a time; once you get the hand of it, you can do more at once.) Fry the chicken until it’s golden brown or it reached an internal temperature of 165°, about 6 to 8 minutes.

5.  Using a spider skimmer or other small strainer, remove the chicken from the oil and drain on paper towels. While chicken is still hot, sprinkle with a coarse salt. Allow chicken to rest before serving. Enjoy! You can easily adapt this recipe into a sandwich, serve with waffles, or drizzle with Schultz’s Cooking Sauce.

Grain-Free Pretzel Chicken Nuggets

Tangy, Salty, Breaded & Fast!

ingredients

Nugget Ingredients

1 lb Chicken Tenders

• 1/2 cup flour (use Coconut Flour or Almond Flour to make it Gluten Free!)

• 2 Eggs

2 tbsp Schultz’s Chipotle Sauce

• 1 bag Pretzels (about 5 oz – make it Gluten Free!)

• 1 tsp Garlic Powder

1 tsp Onion Powder

• Salt, Pepper, Paprika

Avocado Oil (spray recommended!)

 

Tangy Mustard Dip Ingredients

• 1 cup Schultz’s Tangy Mustard Sauce

2 tablespoons low-fat Mayo

• 1/4 cup Honey

1 1/2 teaspoons Schultz’s Sweet Heat Sauce

directions

1.  Preheat oven to 400°.

2.  Cut chicken tenders to nugget size. Lightly pat to dry. Pulse pretzel crumbs in a food processor lightly until they form crumb coating. If you don’t have a food processor, use a mortar and pestle or place in a bag to crush.

3.  Mix salt, pepper and flour in one bowl, whisk eggs and chipotle in a second bowl, and mix pretzel crumbs, garlic powder, onion powder and paprika in a third bowl.

4.  Dredge chicken pieces in flour, then egg mixture and let excess drip off. Gently roll chicken in the pretzel mix, be sure to pat on pieces to coat them well! Place nuggets on a baking sheet lined with parchment paper. Spray each nugget with a light coating of avocado oil.

5.  Cook for 8 minutes, the flip each nugget, spray with more oil and cook for 8 more minutes on the other side. While the nuggets cook, combine ingredients for the dipping sauce. Taste to perfect your desired heat or flavor level. Enjoy!

Buffalo Cauliflower Baked Mac and Cheese

A side-dish that you won’t want to treat as a side.

ingredients

• 7 tablespoons unsalted butter, plus more for the dish

• 1 medium head cauliflower, cut into florets (about 4 cups)

• 1 pound elbow macaroni

• 2 stalk celery, finely chopped 

• 1 small onion, finely chopped

• 2 cloves garlic, minced

• 3/4 cup Schultz’s cooking sauce, either Spicy Original or Sweet Heat

• 2 tablespoons all-purpose flour

• 2 teaspoons dry mustard

• 2 1/2 cups half-and-half

• 2 1 pound sharp yellow Cheddar, cut into 1/2-inch cubes (about 3 1/2 cups)

• 8 ounces pepper jack cheese, shredded (about 2 cups)

• 2/3 cups sour cream

• 1 cup panko

• 1/2 cup crumbled blue cheese

• 2 tablespoons chopped fresh parsley

• Kosher salt

directions

1. Preheat the oven to 350 degrees F and butter a 13-by-9-inch baking dish.

2. Bring a large pot of salted water to a boil and fill a large bowl with ice water. Cook the cauliflower until just tender, about 5 minutes. Use a slotted spoon or spider to remove the cauliflower and immediately submerge it in the ice water to cool completely, then drain. Bring the salted water back to a boil and cook the pasta until al dente, about 7 minutes. Drain and set aside

3.  Meanwhile, melt 3 tablespoons butter in a large skillet over medium heat. Add the celery and onion and cook until soft, about 5 minutes. Stir in the blanched cauliflower and garlic and cook 2 minutes, then add 1/2 cup Schultz’s Spicy Original (or Sweet Heat) and simmer until slightly thickened, about 1 minute more.

4. Melt 2 tablespoons butter in a medium saucepan over medium heat. Whisk in the flour and mustard until smooth. Whisk in the half-and-half, then add the remaining 1/4 cup Schultz’s Spicy Original (or Sweet Heat) and stir until thick, about 2 minutes. Whisk in the Cheddar and pepper jack cheeses, then whisk in the sour cream until smooth.

5. Spread half of the macaroni in the prepared baking dish and pour over about half of the cheese sauce. Top with the cauliflower mixture and the remaining macaroni. Pour the remaining cheese sauce evenly on top.

6. Put the remaining 2 tablespoons butter in a medium microwave-safe bowl and microwave until melted, about 30 seconds. Stir in the panko, blue cheese and parsley. Sprinkle over the macaroni and bake until bubbly, 30 to 40 minutes. Let cool 10 minutes, then serve with additional hot sauce on the side.

Mexican Meatball Subs

Give your next meatball sub some south-of-the-border flair.

ingredients

1 pound meatloaf mix ( ground beef, pork and veal)

• 1/4 cup of finely crushed tortilla chips

• 1 large egg, beaten

• 1/4 cup chopped fresh cilantro, plus 3 sprigs

• 1/4 cup finely chopped scallions, plus more for garnish (optional)

• 3 cloves garlic; 1 minced, 2 mashed

• 3 teaspoons Schultz’s Seasoning & Rub 

• 2 teaspoons ground cumin

• 1 tablespoon Schultz’s Spicy Original or Green Chili Lime

• 1 tablespoon extra-virgin olive oil

• 2 cups canned fire-roasted diced tomatoes

• 4 crusty sub rolls, halved and split

• Diced avocado and crumbled Mexican cheese, for garnish (optional)

directions

1. Preheat the oven to 350. Mix the meat, tortilla chips, egg, chopped cilantro, 1/4 cup scallions, minced garlic, 1 teaspoon Schultz’s Seasoning & Rub, 1 teaspoon cumin in a bowl. Roll into 16 small meatballs.

2. Heat the olive oil in a nonstick skillet over medium heat. Add the meatballs and lightly brown, turning as needed, about 5 minutes. Add the smashed garlic and the remaining 2 teaspoons Schultz’s Seasoning & Rub and 1 teaspoon cumin; cook for 1 to 2 minutes. Add the tomatoes, cilantro sprigs, 1 tablespoon Schultz’s Spicy Original or Green Chili Lime, and 1 1/2 cups water. Bring to a simmer, then cover, reduce the heat to low and cook until the sauce thickens and the meatballs are tender, about 15 minutes.

3.  About 5 minutes before the meatballs are done, toast the rolls in the oven. Place 2 roll halves in each of 4 shallow bowls and top with 4 meatballs. Drizzle with sauce, then pour the remaining sauce into the bowls. Top with avocado, cheese and/or scallions, if desired.

4. Optional: Drizzle with Schultz’s Spicy Original or Green Chili Lime sauce to add some extra kick.

Grilled Rotisserie Turkey and Grilled Stuffing

Basting itself to juicy, smoky perfection.

ingredients

For the Turkey

12-14 lb. turkey (wing tips removed)

• 4 tbsp Schultz’s seasoning & rub

• Vegetable oil

• 6 tbsp unsalted butter, melted

 

For the Stuffing

1 stick (8 tbsp) butter

2 tbsp fresh sage, minced

2 tbsp fresh thyme, minced

3 stalks celery, diced

• 2 yellow onions, diced

• 1 1/2 tsp Schultz’s seasoning & rub

• 3 cups turkey or chicken broth

• 2 large eggs

• 1/2 cup fresh parsley leaves, chopped

• 16 cups cubed stale white bread

directions

1.  For the turkey: Prepare a grill fitted with a rotisserie attachment according to the manufacturer’s instructions for cooking over medium-high heat.

2.  Truss the turkey with butcher’s twine so it is compact, then mount the turkey on the rotisserie spit. Push in the spit forks so they are very secure; tighten the screws well.  

3.  Rub the turkey all over with oil and sprinkle with Schultz’s Seasoning.

4.  Place the spit on the rotisserie. If you are using a large kettle-style charcoal grill, position a 9-by-13-inch disposable aluminum pan under the turkey. If you are using a multi-burner gas grill, position a 9-by-13-inch disposable aluminum pan or a half-sheet pan under the turkey, depending on the clearance between the bird and the grill grates; if necessary, remove the grill grates and place the pan on the bars below.

5.  Cover the grill and cook until the skin starts to brown slightly, about 20 minutes. Uncover the grill, drizzle the turkey slowly with the melted butter as it turns, then cover the grill and continue to cook for another 40 minutes.

6.  Meanwhile, for the stuffing: Melt the butter in a large skillet over medium heat. Add the sage, thyme, celery, onions, 1 1/2 teaspoons Schultz’s Seasoning and cook until the vegetables are softened, about 5 minutes. Add the broth and bring to a simmer. Remove from the heat.

7.  Beat the eggs with the parsley in a large bowl. Add the bread, then pour in the vegetable-broth mixture and toss to combine.

8.  After the turkey has been roasting for 1 hour, uncover the grill and carefully spoon the stuffing into the pan under the turkey. Cover the grill and continue to cook until a thermometer inserted in the thickest part of the thigh registers 165 degrees F and the stuffing is golden on top and hot throughout, another 1 hour to 1 hour 15 minutes; remove the stuffing earlier if it starts to brown too quickly on the bottom. Remove the turkey from the spit and let rest for 30 minutes before carving. Keep the stuffing warm until ready to serve.

Note: If are using a multi-burner gas grill with a half-sheet pan to catch the drippings, you will have enough room to cook a double batch of stuffing.

Grilled Pumpkin Pie

This classic pumpkin pie has one smokey twist.

PREP — 5 Minutes    COOK — 65 Minutes   

TOTAL — 1 Hour 10 Minutes  SERVINGS — 8

ingredients

1, 15oz. can pumpkin puree

• 1 1/4 cups heavy cream

• 2/3 cups granulated sugar

• 1 tsp ground cinnamon

• 1/2 tsp nutmeg

• 1/2 tsp vanilla extract

• 1/4 tsp kosher salt

• 3 large eggs

• 1, 9 inch frozen pie shell in a metal pan

directions

1.  Bring grill temperature up to 400 degrees Fahrenheit.

2.  If using homemade pie crust, prepare crust and press into pie dish. If using store-bought make sure the crust is thawed (not frozen). Using a fork, poke small holes all around pie crust.

3.  Beat one egg in a small bowl and brush on the crust edge. Place pie crust on grill for 15 minutes. Cover grill. Remove crust from grill and reduce heat to 325 degrees Fahrenheit.

4.  Meanwhile, gently whisk the pumpkin, cream, granulated sugar, cinnamon, nutmeg, vanilla, salt and 2 eggs together in a large bowl. Pour the filling into the crust.

5.  Place the pie on the indirect heat side of the grill. Cover and cook until it is starting to set around the edges, about 25 minutes, then rotate, cover and cook for another 25 minutes (the middle will still jiggle slightly).

6.  Move the pie to the direct heat side of the grill and cook for a few more minutes to help crisp the bottom of the pie.

7.  Check pies to see if complete. Place a tooth pick into center of pie. If they come out clean, pie is done. If the pie sticks to toothpick, continue cooking until you get a clean toothpick.

8.  Transfer to a rack; let cool completely.
