Rotisserie Turkey

Grilled Rotisserie Turkey and Grilled Stuffing

Grilled Rotisserie Turkey and Grilled Stuffing

Basting itself to juicy, smoky perfection.

PREP — 10 Minutes    COOK — 1-2  Hours 15 Minutes   

TOTAL — 2 Hour 25 Minutes  SERVINGS — 8-10

ingredients

For the Turkey

12-14 lb. turkey (wing tips removed)

• 4 tbsp Schultz’s seasoning & rub

• Vegetable oil

• 6 tbsp unsalted butter, melted

 

For the Stuffing

1 stick (8 tbsp) butter

2 tbsp fresh sage, minced

2 tbsp fresh thyme, minced

3 stalks celery, diced

• 2 yellow onions, diced

• 1 1/2 tsp Schultz’s seasoning & rub

• 3 cups turkey or chicken broth

• 2 large eggs

• 1/2 cup fresh parsley leaves, chopped

• 16 cups cubed stale white bread

directions

1.  For the turkey: Prepare a grill fitted with a rotisserie attachment according to the manufacturer’s instructions for cooking over medium-high heat.

2.  Truss the turkey with butcher’s twine so it is compact, then mount the turkey on the rotisserie spit. Push in the spit forks so they are very secure; tighten the screws well.  

3.  Rub the turkey all over with oil and sprinkle with Schultz’s Seasoning.

4.  Place the spit on the rotisserie. If you are using a large kettle-style charcoal grill, position a 9-by-13-inch disposable aluminum pan under the turkey. If you are using a multi-burner gas grill, position a 9-by-13-inch disposable aluminum pan or a half-sheet pan under the turkey, depending on the clearance between the bird and the grill grates; if necessary, remove the grill grates and place the pan on the bars below.

5.  Cover the grill and cook until the skin starts to brown slightly, about 20 minutes. Uncover the grill, drizzle the turkey slowly with the melted butter as it turns, then cover the grill and continue to cook for another 40 minutes.

6.  Meanwhile, for the stuffing: Melt the butter in a large skillet over medium heat. Add the sage, thyme, celery, onions, 1 1/2 teaspoons Schultz’s Seasoning and cook until the vegetables are softened, about 5 minutes. Add the broth and bring to a simmer. Remove from the heat.

7.  Beat the eggs with the parsley in a large bowl. Add the bread, then pour in the vegetable-broth mixture and toss to combine.

8.  After the turkey has been roasting for 1 hour, uncover the grill and carefully spoon the stuffing into the pan under the turkey. Cover the grill and continue to cook until a thermometer inserted in the thickest part of the thigh registers 165 degrees F and the stuffing is golden on top and hot throughout, another 1 hour to 1 hour 15 minutes; remove the stuffing earlier if it starts to brown too quickly on the bottom. Remove the turkey from the spit and let rest for 30 minutes before carving. Keep the stuffing warm until ready to serve.

Note: If are using a multi-burner gas grill with a half-sheet pan to catch the drippings, you will have enough room to cook a double batch of stuffing.

Grilled Pumpkin Pie

Grilled Pumpkin Pie

This classic pumpkin pie has one smokey twist.

PREP — 5 Minutes    COOK — 65 Minutes   

TOTAL — 1 Hour 10 Minutes  SERVINGS — 8

ingredients

1, 15oz. can pumpkin puree

• 1 1/4 cups heavy cream

• 2/3 cups granulated sugar

• 1 tsp ground cinnamon

• 1/2 tsp nutmeg

• 1/2 tsp vanilla extract

• 1/4 tsp kosher salt

• 3 large eggs

• 1, 9 inch frozen pie shell in a metal pan

directions

1.  Bring grill temperature up to 400 degrees Fahrenheit.

2.  If using homemade pie crust, prepare crust and press into pie dish. If using store-bought make sure the crust is thawed (not frozen). Using a fork, poke small holes all around pie crust.

3.  Beat one egg in a small bowl and brush on the crust edge. Place pie crust on grill for 15 minutes. Cover grill. Remove crust from grill and reduce heat to 325 degrees Fahrenheit.

4.  Meanwhile, gently whisk the pumpkin, cream, granulated sugar, cinnamon, nutmeg, vanilla, salt and 2 eggs together in a large bowl. Pour the filling into the crust.

5.  Place the pie on the indirect heat side of the grill. Cover and cook until it is starting to set around the edges, about 25 minutes, then rotate, cover and cook for another 25 minutes (the middle will still jiggle slightly).

6.  Move the pie to the direct heat side of the grill and cook for a few more minutes to help crisp the bottom of the pie.

7.  Check pies to see if complete. Place a tooth pick into center of pie. If they come out clean, pie is done. If the pie sticks to toothpick, continue cooking until you get a clean toothpick.

8.  Transfer to a rack; let cool completely.

Grilled Cider Glazed Veggies

Smokey vegetables with a sticky, tangy glaze.

ingredients

1 1/2 lb. parsnips

• 1 1/2 lb. carrots

• 1 large sweet onion

• 1 tbsp olive oil

• 1-2 tbsp Schultz’s seasoning & rub

• 1/4 cup apple cider

• 1/4 cup chicken broth

• 2 tbsp butter

• 1 tbsp maple syrup

 

directions

1.  Peel and cut vegetables into 1-inch pieces. In a large bowl, toss parsnips, carrots and onion with the olive oil until the vegetables are well coated. Season to taste with Schultz’s Seasoning & Rub.

2.  Bring cider, broth, butter and maple syrup to a boil. Cook, uncovered, until reduced by half and syrupy, about 10 min. Season with Schultz’s Seasoning & Rub.

3.  Prepare grill for direct cooking over medium heat (300-400 degrees.) Preheat a perforated grill pan for 10 minutes.

4.  Spread the vegetables onto pan in a single layer. Grill with the lid close as much as possible, stirring occasionally, for about 10 minutes or until the vegetables and tender and lightly charred.

5.  Transfer veggies to a bowl, toss with the apple cider glaze and serve immediately.

Chicken Enchilada-Stuffed Squash

The perfect balance of healthy and tasty.

ingredients

• 2 Acorn Squash, halved and center scooped out

• 2 tbsp Olive Oil

• 1 small Poblano Chile Pepper, seeded and diced

• 1 clove Garlic, grated

• 1/2 tsp Ground Cumin

• 1 tbsp Schultz’s Gourmet Seasoning

• 2 cups Chicken, shredded

• 1 cup Black Beans

• 1 cup Corn Kernels

• 5 oz. Red Enchilada Sauce

• 5 oz. Schultz’s Gourmet Chipotle Cooking Sauce

• 1 cup shredded Cheese

• 1 avocado, sliced for garnishing

• Fresh cilantro and sour cream for topping

directions

1.  Preheat the oven to 400°F.

2.  Place acorn squash halves flesh side up on a baking pan. Brush with 1 tbsp of olive oil and sprinkle with salt and pepper. Roast in the oven for 25 minutes or until centers are softened.

3.  Meanwhile, in a 2-quart saucepan, heat remaining tbsp of olive oil over medium-high heat. Add poblano and cook, stirring occasionally until the peppers begin to soften, about 3 minutes. Add the garlic, cumin, and Schultz’s Seasoning and cook an additional 3 minutes, stirring.

4.  Add chicken, enchilada sauce, Schultz’s Chipotle Cooking Sauce, corn kernels and beans to saucepan. Bring to a low boil, then reduce heat and simmer for about 10 minutes or until sauce thickens. Remove from heat.

5.  If you like cilantro, you can stir 1/2 cup fresh cilantro into the chicken mixture.

6.  Fill the centers of each squash half with the chicken and top with shredded cheese. Bake until the cheese is lightly golden and melted, 15-20 minutes.

7.  Garnish with avocado, sour cream and cilantro.

Grilled Cheese with Apple and Bacon

With contrasting flavors, this sandwich makes the mouth sing!

ingredients

• 3 tbsp Schultz’s Gourmet Sweet Heat Cooking Sauce

• Dijon Mustard (or Tangy Mustard BBQ Sauce)

• 8 slices of country bread (or sourdough)

• 8 slices sharp cheddar cheese

• 8 strips of bacon

• 1 granny smith apple, sliced thin (or honey crisp)

• Butter

directions

1.  Cook bacon on stove top in a skillet.

2.  Add 3 tbsp of Sweet Heat Cooking Sauce to coat bacon toward the last few minutes of cooking. If cooking bacon in an oven instead, baste on sauce with a brush.

3.  Spread dijon mustard on 4 slices of bread.

4.  Top each piece of bread with 2 slices of cheese, 2 slices of bacon and slices of apple. Top with the other slices of bread.

5.  Butter the sandwiches, then cook in a skillet (you can use the same one you cooked the bacon in, just drain the grease first) over medium-low heat until the cheese melts and the bread is golden, about 3 minutes per side.

Stuffed Squash Shell Pasta

A rich, oozy, easy pasta dinner.

ingredients

• 1 Medium Butternut Squash

• 2-3 tbsp Schultz’s Gourmet Cooking Sauce

• 2 tsps Olive Oil

• 1/2 tsp Salt, plus more to taste

• 12oz. Jumbo Shell Pasta

• 1 cup Ricotta Cheese

• 1 cup grated Parmesan Cheese

• 4 tsps Fresh Lemon Juice

• 2 tsp Lemon Zest

• 2 tsp Oregano

Pasta Jays Creamy Tomato Sauce

directions

1.  Preheat the oven to 400° and line a sheet tray with parchment paper.

2.  Cut the squash in half and remove the seeds. Place the squash onto the prepared sheet tray and season the flesh with olive oil and salt. Turn them so that they’re cut-side down and roast until tender, about 35-40 minutes. Let cool for 7 to 10 minutes, then scoop the flesh into a medium bowl and set aside (if you want to make this in advance, it can be stored for up to 2 days). Lower the oven to 375°.

3.  While the squash is roasting, boil the pasta. Bring a large pot of salted water to a boil. Add the jumbo shells to the water and cook for 9 minutes. Drain the pasta and rinse under cold running water for 1 minute.

4.  In a large bowl, lightly beat the egg and combine the ricotta, 3/4 cup of the Parmesan, garlic, Schultz’s Cooking Sauce, lemon juice and zest, oregano and cooled roasted squash. Taste and adjust the seasoning with salt. Fill each cooked pasta shell with 1 1/2 tablespoons of filling and snuggle the shells into a 9″x13″ baking dish.

5.  Cover the top with Pasta Jays Creamy Tomato Sauce, letting it spill down into the shells, and underneath. Top with remaining Parmesan and bake until golden brown and bubbling. Enjoy!

Taco Tots Burrito

Taco Tots Burrito

All the best breakfast foods wrapped in one tortilla.

PREP — 3 Minutes   COOK — 27 Minutes   

TOTAL — 30 Minutes  SERVINGS — Six

ingredients

• 1 bag extra-crispy tater tots

• 12 slices of bacon

• 12 eggs

• 1 small white or red onion

• 2-3 jalapeño peppers

• 2 cloves garlic

• 4 vine tomatoes

• 2-3 scallions

• 2 limes

• 1 can Pinto Beans

• 1/2 lb. Pepper Jack, Cheddar or Monterey Jack

• Handful Cilantro, chopped

• 6 large flour tortillas

• 2-4 tsps Schultz’s Gourmet Seasoning & Rub

• Any Schultz’s Cooking Hot Sauce to drizzle on top

 

directions

1. Preheat oven to 425°F and gather ingredients. Line a sheet pan with parchment paper and arrange the tots in a single layer. Place tray in the oven and bake 20-25 minutes. Give the pan a shake once to turn tots while they cook.

2.  While the tots cook, peel and finely chop the onion. Seed and finely chop the jalapeños. Peel garlic. Set a third of the onion, the pepper and garlic aside for the beans. Seed and dice the tomatoes, and finely chop the scallions. Place remaining onions and peppers in a bowl. Add salt and juice from 1 of the limes. Add the tomatoes, scallions and cilantro; toss to combine.

3.  Arrange bacon on slotted pan or rack lined baking sheet lined with foil. Bake bacon 15-18 minutes on rack below tots until brown and crispy.

4.  Heat a small skillet over medium heat. Add oil, and reserved vegetables. Add beans to a food processor with a little water. Add about 1 tsp of Schultz’s Seasoning & Rub and juice from the remaining lime. Transfer beans to the skillet and heat through.

5. Remove bacon, allow to cool and then chop. Grate cheese on larger holes of box grater. Remove Tots and toss with Schultz’s Seasoning & Rub to coat.

6. Crack eggs into bowl and whisk up with salt, pepper and 2 tsps of Schultz’s Cooking Hot Sauce. Scramble the eggs on a large skillet over medium-high heat to desired doneness.

7. Char tortillas over flame or in a dry pan over high heat. About 30 seconds to 1 minute on each side.

8. Build burritos: beans, eggs, cheese, chopped bacon, taco tots, pico de gallo. Tuck in sides and wrap and roll the burritos tightly. Cut each in half to serve. Garnish with a drizzle of Schultz’s Cooking Hot Sauce if desired. Enjoy!

Spicy Shrimp and Grits

Our instructions for a southern classic.

PREP — 5 Minutes   COOK — 28 Minutes   

TOTAL — 33 Minutes  SERVINGS — Two

ingredients

• 3 cups Whole Milk

• 1 cup Water

• 1/3 cup Schultz’s Gourmet Spicy Original Cooking Hot Sauce

• 1 lb. peeled and deveined Shrimp

• 1 cup Grits

• 4 tbsp Butter

• 1 1/2 tsp Kosher Salt

• 1/2 cup grated Sharp Cheddar Cheese

• 2 cloves Garlic, minced

• 2 tbsp Oil or Butter

• Fresh Parsley for garnish

 

directions

1. Bring milk, water and salt to a boil in a large saucepan. Reduce heat slightly, then slowly add grits to the liquid, whisking the whole time. Continue to whisk for a minute until no clumps remain. Reduce the heat to low, cover and cook for 15-20 minutes, stirring well every 2-3 minutes.

2.  When finished cooking, remove from heat and stir in butter and cheddar cheese until well incorporated. Cover and set aside.

3.  In a large skillet, heat oil to medium – medium high. Add shrimp and sauté 2-3 minutes, or until they start to turn pink. Add garlic, stir well, then add Schultz’s Spicy Original Cooking Hot Sauce. Stir well, then continue to cook 3-5 minutes.

4.  Remove from heat. Plate grits in a shallow bowl, top with shrimp and garnish with fresh parsley. Enjoy!

Sweet Heat Glazed Salmon Sushi

Schultz’s, Sushi Rice and Delicious Salmon

ingredients

• Sushi Rice (or short grained rice)

• 1 Cucumber

• 1 Carrot

• 1 block Cream Cheese

• Nori

Sweet Heat Glazed Salmon

• Rolling Mat

 

directions

1.  Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2-3 times or until the water is clear. Place the rice and 2 cups water into a medium saucepan and place over high heat. Bring to a boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.

2.  While rice cooks, cook the salmon by following our Sweet Heat Glazed Salmon recipe. Prep by cutting the cucumber, and carrot into 3 inch julienne strips and set the cream cheese out so it softens. Combine the rice vinegar, sugar and salt and heat in the microwave for 30-45 seconds. Transfer the rice into a large wooden or glass bowl and add the vinegar mixture. Fold thoroughly combine, allow to cool to room temperature.

3.  On a rolling mat, place one sheet of nori with the rough side facing upwards. Wet your hands and grab a handful of rice and place it on the nori. Spread the rice evenly throughout the nori without mashing the rice down. Season rice with a pinch of sesame seeds, then flip over so the nori is facing upwards.

4.  Arrange the cream cheese, carrots, cucumber and salmon in horizontal rows 1 inch from the bottom of the nori. Grabbing both nori and the mat, roll the mat over the filling so the extra space at the bottom touches the other side, squeezing down to make a nice tight roll. Squeeze down along the way to form the roll into its shape.

5.  Transfer the roll onto a cutting board. Rub a knife on a damp paper towel before slicing the roll into six equal portions. Enjoy!

Buffalo Chicken & Bleu Cheese Sushi

A Major Twist on a Major Classic

PREP — 15 Minutes    COOK — 25 Minutes   

TOTAL — 45 Minutes  SERVINGS — One

ingredients

• Sushi Rice (or short grained rice)

• 2 tbsp Rice Vinegar

• 1 tbsp Sugar

• 1 tbsp Salt

• 1 stalk Celery

• 1 Carrot

• 3 oz. Bleu Cheese crumbles

• Rolling Mat

1.  Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2-3 times or until the water is clear. Place the rice and 2 cups water into a medium saucepan and place over high heat. Bring to a boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.

2.  While rice cooks, cook the chicken wings by following our Signature Gourmet Hot Wings recipe. Prep by cutting the cucumber, and carrot into 3 inch julienne strips. Combine the rice vinegar, sugar and salt and heat in the microwave for 30-45 seconds. Transfer the rice into a large wooden or glass bowl and add the vinegar mixture. Fold thoroughly combine, allow to cool to room temperature.

3.  On a rolling mat, place one sheet of nori with the rough side facing upwards. Wet your hands and grab a handful of rice and place it on the nori. Spread the rice evenly throughout the nori without mashing the rice down. Season rice with a pinch of sesame seeds, then flip over so the nori is facing upwards.

4.  Arrange the blue cheese crumbles, carrots, cucumber and pulled chicken in horizontal rows 1 inch from the bottom of the nori. Grabbing both nori and the mat, roll the mat over the filling so the extra space at the bottom touches the other side, squeezing down to make a nice tight roll. Squeeze down along the way to form the roll into its shape.

5.  Transfer the roll onto a cutting board. Rub a knife on a damp paper towel before slicing the roll into six equal portions. Enjoy!
