Rocky Mountain Pulled Pork

ROCKY MOUNTAIN PULLED PORK

We like to call this The World’s Greatest Sandwich. The meat is tender, juicy, and messy..the way a pulled pork sandwich should be!

PREP — 5 Minutes    COOK — 4.5-5 Hours    TOTAL —5 Hours  SERVINGS — Six

ingredients

•  3lb Pork Shoulder (Pork Butt)

•  1/4 Cup Schultz’s Gourmet Premium Seasoning & Rub

•  14oz Schultz’s Gourmet Sweet Heat Hot Sauce

•  Cilantro Lime Coleslaw 

directions

1. Preheat oven to 330 ºF

2. Apply Schultz’s Gourmet Premium Seasoning & Rub liberally to the pork shoulder.

3. Wrap tightly in heavy duty aluminum foil twice keeping the folds on top.

4. Place in oven at 330 ºF for 3.5 – 4 hours (or slow cook in a smoker/grill)

5. Carefully remove and drain juices into a grease separator for later use.

6. Allow meat to rest for 30 minutes.

7. Trim and discard fat.

8. Using two forks or hands, begin shredding the meat and put into a 2” deep baking dish that can go back into the oven.

9. Once all meat has been shredded or pulled apart apply 14 oz. of Schultz’s Gourmet Sweet Heat Hot Sauce and mix thoroughly.

10. Take the separated juices from the meat and stir and add to meat and hot sauce.

11. Place back into oven at 250 °F stirring well while reheating.

12. Serve on hearty buns as a sandwich with Cilantro Lime Coleslaw.

7 Grilling Tips from the Schultz Brothers

We’ve got 7 tips from the Grill-Masters themselves… Mark, Matt, and Mike.  They’ve had tons of experience behind the Weber and have some hot tips that they’ve gathered throughout the years.  So fire it up and get ready to grill like a pro.

1. Don’t Burn Your BBQ Sauce! Remember, BBQ sauces have sugar…and sugar burns. Wait to brush the BBQ sauce onto your meat until the last few minutes of cooking and close the grill lid to allow sugars to caramelize.

2. “Don’t be afraid to use cast-iron- especially for staging. Cast-iron gets hot and stays hot and can make your life easier when you’re running out of room on the grill.”- Matt Schultz

3. Clean your grill while it’s hot- it’ll be much easier to get it clean than it will be when it cools down. If you don’t have a brush you can use a piece of aluminum foil as a brush-hack. Pro-tip: wipe EVOO on the grate after it’s clean to season for your next cookout!

4. Check the internal temperature to see if it’s done. Use an instant-read thermometer like this one: Or try this finger test to determine how your meat is cooked.

5. Let the meat rest after grilling and before eating to let the juices distribute evenly. A good rule of thumb is 5 minutes per pound. Even while it’s resting, the internal temp is still high and it’s still cooking.

6. Flip-happy? Resist the temptation to flip small cuts of meat repeatedly because you will lose a lot of the moisture that makes it juicy and delicious. Pay attention to the temperature of the grill and how long each side has been cooking.

7. “Get prepared for Grilling Season early. Sharpen your knifes, clean out the grill and try something new! Change it up. Instead of T-bone steaks, try tri-tip steaks. Instead of pork chops, try pork shoulder. Get out from the kitchen and get back behind the grill-make some recipes you’ve been waiting to try. Get as much grilling done now BEFORE grilling season starts, so by the time you’re hosting a BBQ or backyard party, not only will your knifes be sharpened, but so will your grilling technique.” – Matt Schultz

Signature Smokehouse Burgers

SIGNATURE SMOKEHOUSE BURGERS

These burgers are the real deal…smoky, juicy, peppery! Top them with all your favorite fixings.

PREP — 10 Minutes   COOK — 6 Minutes    TOTAL — 16 Minutes  SERVINGS — Six

ingredients

•  1.5 lb 80/20 Ground Beef

•  3 tbsp. Schultz’s Gourmet Premium Seasoning & Rub

•  OPTIONAL: Top with any Schultz’s BBQ Sauce

directions

1. Place Ground beef in mixing bowl and add Schultz’s Gourmet Premium Seasoning & Rub

2. Mix well with hands

3. Measure out weight of patties (1/4lb, 1/3lb or 1/2lb)

4. Lightly form patties with hands and lightly indent the middle of the patties with thumb.

5. Place burgers over hot grill and cook until internal temperature is 145°F

6. Serve with your favorite hamburger fixings (like our BBQ Sauces) and Schultz’s Gourmet Camp Style Potatoes!

Signature Gourmet Hot Wings

SIGNATURE GOURMET HOT WINGS

These grilled gourmet hot wings are your secret weapon for a stand apart BBQ. And pretty much everything else.

PREP — 5 Minutes    COOK — 25 Minutes    TOTAL — 30 Minutes  SERVINGS — Five

ingredients

•  5 lbs. of fresh chicken wings.

•  3 tbsp. of Schultz’s Gourmet Premium Seasoning & Rub

•  10-12 oz. of Schultz’s Gourmet Spicy Original Hot Sauce.

•  Blue Cheese or Ranch for dipping (optional).

directions

1. Season raw chicken wings with Schultz’s Gourmet Premium Seasoning & Rub then place on grill.

2. Grill chicken until golden brown (internal temperature 165ºF).

3. To avoid burning the chicken, constantly flip chicken and cook evenly on both sides. Once chicken is finished, remove from heat.

4. Warm 10-12oz of Schultz’s Gourmet Spicy Original Hot Sauce in a medium to large pot and do not boil the sauce.

5. Add the cooked wings directly from the grill into the pot with the hot sauce. Stir well before serving.

6. Serve with blue cheese or ranch. Enjoy!
